Welcome to Day 2 of Pure Jeevan's "Salad Dressing Week"!? Today we take a trip across the Pacific to the land of the "Rawsing Sun." I've yet to meet any raw vegans from Japan, but would be highly interested in hearing about what it's like to be raw vegan there.
Today's video not only shows a tasty salad dressing recipe, but it's really a testament to bold improvisation in your raw kitchen. In order to create something new, you really have to be willing to experiment. Sometimes you simply fail!? But, more often than not, a recipe that you have not quite perfected just needs some tweaking.
Many of you know some of my story of healing. I suffered with Polycystic Ovarian Syndrome (PCOS) since I was a young teenager. As many of you know, I'm more of an intuitive eater than anything else. I eat what I intuitively feel my body needs most of the time. Well, for the past two weeks what my body has been asking for is cauliflower. I went through a cauliflower stage sometime last year, and it seems I'm back to eating that lovely white flower veggie again!
At first I was making mashed cauliflower (like? mashed potatoes) and keeping the recipe very simple. I've made complex versions of the mashed cauliflower before, but I was really drawn to a more simple taste so all I was adding was some olive oil, salt, and a tiny bit of macadamia nuts. Yesterday, however, as I was cleaning the cauliflower (since my body was telling me it wanted more of it), I had a sense that I wanted something more vibrant, more fun than simple mashed cauliflower. So, I followed my intuition (picking up whatever I felt my body wanted to eat with the cauliflower) and here's what I created...

Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. As we promised yesterday, we're featuring a wonderful (and LONG!) video interview today with the incredible John Kohler of Santa Rosa, CA. You may be familiar with John from some of his popular web sites, most notably his "Living and Raw Foods" community site at www.RawFoods.com. Below are parts one, two, and three of Wendi's interview. They're roughly 10 minutes each. (That's a lot of time, I realize, but at least check out Part 1 if you're short on time, as it offers an amazing look at John's front yard.)
Wendi said she was at a loss for words when interviewing John at his home (and you'll soon see why!), because what he has done on his 1/10th of an acre lot is *phenomenal*. He told Wendi off the video that it's all a matter of trial and error--finding what grows easily and well, and working with those plants the most. If something takes a lot of effort, or is difficult to easily grown, he skips it and focuses on what can give the most yield for the least work. Almost everything grown on John's land is edible!

The video of John's garden and the pictures (see yesterday's post) are enough to inspire ANYONE to plant even a small garden for themselves! WOW!
John has a lot going on, including a monthly potluck. Wendi and KDcat happened to be in town on the night of the March potluck, so Wendi was invited to speak at the event. It was a nice, laid-back group of people, Wendi said, and they sat at a long table talking about the raw lifestyle, health issues / concerns, what children are fed in school, and so much more -- a really nice group of people, Wendi said, noting she'd love to visit them all again. Here at Pure Jeevan we are preparing for our cross country tour to educate others about raw foods. This means we are paring down on a lot of things, donating a lot, selling some things, and pretty much not buying anything unless it's absolutely necessary. That's what we've been doing for almost two years now (we're waiting for the house to sell). Recently, however, I decided it was time to spend a little bit of money even if it wasn't absolutely necessary.

What did we buy? Dishes! Seems a bit strange to finally spend some money on something unnecessary and have it be dishes, right? Well, I had a few reasons for this purchase. The first is that when we are living in the RV, the space is going to be minimal. There won't be a lot of room for dishes, let alone much of anything else. Since there's not a lot of space to have dishes drying, we'll need to be washing, drying, and putting away immediately after use. That may not sound like a big deal, but when someone in the family decides to eat a few different things and leave the dirty dishes in the tiny RV sink, on the small counter, or somewhere else, it's going to really seem like a bigger mess than it is. So, to remedy this I thought it would be good for each of us to have our own dishes. That way we have a sense of responsibility for our own particular dishes--we know they are ours and we are responsible for taking care of them.
