Persimmons are a tad unusual, aren't they? Perhaps they're simply uncommon. After all, few major grocers carry them regularly (at least, not in our area). But, occasionally, they crop up as a specialty, limited-quantity offering. That's more or less how we obtained some recently. Wendi *loves* them, so we quickly snatched up a few at our local co-op last week. Here's the vid (below). Note the strange lack of a video still image. I'm not sure if it's a YouTube glitch, or if I made some sort of error in rendering. But, the video works just fine, so you'll just have to take a small leap of faith here and click that play btton! Every Autumn I proclaim that it is surely the best season of all. Then, without fail, every Spring I find myself feeling and saying the same thing. How can any season be better than this time of renewal, rebirth, and unlimited potential for beauty to spring up in front of your eyes with every glance?

I've done it, I've done it, I've DONE IT!!!? I've perfected a recipe for raw vegan potato pancakes! My friend Melissa shared her potato pancake recipe with me and, like always, I had to play around with it (I rarely go by a set recipe). Had it not been for her original recipe, I wouldn't be writing this post! So, thanks, Melissa!!

This video is nearly 10 minutes long (sorry, we'll aim for shorter ones in the future), but shows a full process for making a delicious, spicy nut dip. From there, we show two options for making the sandwich -- one using dehydrated raw bread, another using lettuce as the wrapper. It was a fascinating piece (linked to below, actually) and, to my complete surprise at the time, touched on her fairly serious interest in raw foods -- and, wouldn't you know, she also lives right here in sunny Portlandia!
Soon, I realized that I'd seen her name around town before -- and Wendi did, too! There are these absolutely addictive kale chips, you see... (We like to get them at our local food co-op from time to time because they're truly something special.) ?But, until recently, we didn't piece it all together -- that one person manages to produce this distinctive brand of raw snacks, teach yoga classes here in Stumptown, AND somehow also tour the entire globe as lead guitarist ?for world-class acts like Beyonce and Pink!
