Jim here... Until our home sells (SOON!!!) and Wendi and I launch ourselves into the world as full-time raw food teachers / lecturers / inspiration providers, I'm more or less stuck in the corporate world during the day. While much of what happens in this Dilbert-esque environment is, as many of you likely know, absolutely meaningless, there is nonetheless the occasional pearl of wisdom to be pried from the clammy jaws of the 9-to-5 world. I was, for example, just reminded of a story I heard at a seminar once. Not surprisingly, the seminar pertained to the art of money making. However, there's another more fulfilling message to it as well.
A large modern newspaper company still uses these ancient printing presses from the 1950s -- huge old monstrosities with enough belts, pulleys, and greasy gearboxes to make any modern-day steampunk enthusiast squeal with delight. One day, not long after the old press manager finally leaves the company, the main press breaks down. Manuals are consulted, technicians brought in, engineers asked to take a peek. No one can bring the beast back to life. But there's a woman on the Internet who specializes in these babies -- and, guess what, she's local! So, they call her in. She listens to their problem and says she can fix it, but it's going to run them $5,000.
Today for "Take the Time Tuesday," we'd like you to take the time to meet Mimi Kirk, whom many of you may know as the winner of PETA's "Sexiest Vegetarian Over 50" contest last fall. Eating only mono meals is going pretty well. I'm on my third food, so far, and have ended day two. This evening I've started my third fruit: Pineapples!

For today's installment of Makin' It Monday, we wanted to share something that we've been making a lot of lately. It's so simple, yet so delicious and refreshing. Here's the recipe:

- 3 large stalks of celery
- 1 handful of cilantro

Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? WOW!!! WOW!!! WOW!!! Check out the response from 40+ people from around the globe. It's a little overwhelming to see this much positive energy in one place. Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. Today I am thankful for the small things in life that often go overlooked. I'm thankful Jim made some sweet dessert last night when I wanted it. I'm thankful KDcat is having a fun time with some of her friends right now. I'm thankful that: the trash collectors just picked up the garbage (we don't produce a whole lot since going raw); the older woman across the street has started smiling and being nice to KDcat; the sun is out and the snow is melting; I have another computer job to work on for some income.
Jim here... Just wanted to say quickly that I'm heading off to the Raw Spirit Festival (RSF) today! I'll be carpooling (or, vanpooling) with our friends Melissa and Dave Sokulski, their daughter Ella, and our friend Bethany. We're all volunteering at RSF, which should not only be a lot of fun, but should also be a great way to get to know many other fellow raw foodies.
So, we'll be arriving Friday to help set up, enjoying the festival over the weekend, and staying Monday to help them "break it down." Since we need to leave Monday, we'll likely miss a fun-sounding party at Rawbin's place Monday night. But, I'm sure it'll be a blast overall, and it'll also be fun to camp out again, as I haven't done that in a while. I especially hope I'm also able to light something on fire, as I always love the fire aspect of camping most. Maybe I'll run into some of those raw foodies who spin fire-poi and can learn a new skill!
