Jim here... Wow, we haven't posted in a few days. That calls for some action! Hmmm... how about taking a look at some delicious mini pizzas Wendi whipped up the other day:

We went absolutely nuts for these little "pizzas." They were both tasty and fun. If memory serves, I believe she made them by taking slices of firm roma tomatoes, spooning on some improvised pesto sauce that she whipped up, sprinkling on some chopped basil leaves, sprinkling on some "cheese" that she made with ground Brazil nuts, garlic, and salt, and then topping each "pizza slice" off with a half cherry tomato. No recipes necessary here; just take a look at the picture & go try it!

To continue with our Summertime Raw series, we took a trip to Pittsburgh's Frick Park to enjoy the beautiful day. Before leaving, we packed another meal to show you how easy it can be to eat a raw food diet while away from home.Frick Park was wildly popular among dogs; we saw canines of all shapes and sizes -- all playful, yet calm in comparison to our lovely Julia, a rescued blue Doberman. Joogie enjoyed the outing very much because she was able to snack on cucumbers (a favorite treat), chase after a few joggers (we're teaching her that this isn't proper doggy behavior), knock the cooler out of Jim's hands when we were leaving (which broke a few of our best glass dishes), and lick the faces of a few new furry friends. We've been to many parks, but we have a feeling this is now Julia's favorite. ?

In yesterday's blog and video post, we showed you how easy it is to simply grab fresh fruits and veggies and head out the door for an outing. In that show, no refrigeration or preparation was necessary. However, we also know that many of you are new to raw foods, and perhaps eating simple chopped produce isn't so appealing for you compared to traditional foods you'd normally eat while in a park. So, today's goal is to demonstrate how simple it can be, making it easy for you to stick to a raw food lifestyle and not feel tempted by the cooked foods that may be around while you're out enjoying the summer with friends and family. So, today's video is about stepping it up to the next level.

Something has come up and it may put some of our projects on hold for about six months, or so! What could come up to make us give up our goals/plans for 2009? Umm...how about being awarded The Best Job In The World, the Island Reef Job! Australia is doing some major tourism marketing for their lovely Paradise Island. For six months an individual will live in a 3-bedroom home, comb the beach, blog about the experience, do some video blogging, respond to interviewers, feed fish, and just basically live a life in Paradise!!

There's a peculiar yet recurring kind of argument I get from a number of people from time to time when the subject of diet or health arises. Basically, it goes like this: "Yeah, all of those vegetables and exercise might be good for you, and all of that meat and fried food I eat might be bad for me, but what if you get hit by a truck tomorrow "

This sort of perspective is interesting to me for at least two major reasons.

Before we moved to Portland, Oregon, land of all things fresh and organic within walking distance, we had to drive quite a distance to reach the food co-op (the only place that had a good selection of organic produce and other raw food necessities). So, we only went shopping about once a week. It took a lot of trial and error to find ways to keep our weekly produce fresh for about a week.

We learned which fruits and vegetables stay fresh the longest, and which go bad the fastest. Based on this, we stocked the refrigerator accordingly (and used up the produce accordingly, as well). The fruits and veggies that stayed fresh the longest were stored in the backs of the shelves (things like carrots, beets, broccoli, cauliflower, apples, etc.). Next we stored the greens that lasted a pretty good amount of time (like kale and collards). And in the front of the shelves and in the door, we stored the more delicate greens (like lettuces and herbs).

Our weekend is going to be filled with Spring cleaning. Many may not think of any type of cleaning as fun, but there's something special about Spring cleaning. Maybe it's because when we do Spring cleaning in our home, we tend to make it a family event. When we do things together as a family, even though there may be a little bickering here and there, but for the most part we have fun. There's something truly rewarding about working together as a team for something that is going to benefit everyone.

Can you believe it's mid-October already ? Here in Pittsburgh, for those lucky few who may have fig trees, that means harvest time! Well, almost. Take a look at this video we made about figs!

If you like raw cauliflower and fresh mint, I recommend you try this dish! Jim and KDcat don't like raw cauliflower much, so this dish wasn't a big hit with them. I, however, consumed the entire dish before the end of the day! I LOVED it!

Mono and Headaches: Looking for Help

Mononucleosis (Mono) is a common viral illness. When children develop mono, it is usually not obvious since it seems like a normal cold. When teens and adults develop mono, however, the symptoms are much more severe. Most individuals will feel better within about three weeks, but fatigue can continue on for about three months! Who wants to feel ill that long? Who wants to feel tired for MONTHS ! Who wants to suffer from such severe headaches ! Not me, that's for sure.

KDcat and I returned from the ashram last night filled with peace and motivation to move forward with our current goals (more about this in the upcoming newsletter). However, we also returned to a home with next to no produce in it (well, compared to what we normally have available). What to do? There's no way to run to the co op today (only one car in our home) or this evening, so it's time to be creative. Let's take a look at what Pure Jeevan has in the fridge and on the counter, and we'll see what we can create!
