Today we're running another installment of our "Thankful Thursday" series. This time, we're especially thankful ... for YOU, the Pure Jeevan family! Who'd have thought, less than two years ago when launching this blog, that we'd make thousands of connections with others looking for inspiration on their raw food journey !!? It's simply astounding -- and we're still actually "just getting started."
As always, we're thrilled to provide information and inspiration. It's counter-intuitive, when you really consider it; "raw foods" may be just two simple words, yet there always seems to be more and more to talk about, more people to interview, more success stories to highlight, more recipes to contribute, more tips and tricks to share, more personal reflections to offer.
Before we moved to Portland, Oregon, land of all things fresh and organic within walking distance, we had to drive quite a distance to reach the food co-op (the only place that had a good selection of organic produce and other raw food necessities). So, we only went shopping about once a week. It took a lot of trial and error to find ways to keep our weekly produce fresh for about a week.
We learned which fruits and vegetables stay fresh the longest, and which go bad the fastest. Based on this, we stocked the refrigerator accordingly (and used up the produce accordingly, as well). The fruits and veggies that stayed fresh the longest were stored in the backs of the shelves (things like carrots, beets, broccoli, cauliflower, apples, etc.). Next we stored the greens that lasted a pretty good amount of time (like kale and collards). And in the front of the shelves and in the door, we stored the more delicate greens (like lettuces and herbs).
For today's installment of Makin' It Monday, we wanted to share something that we've been making a lot of lately. It's so simple, yet so delicious and refreshing. Here's the recipe:

A few weeks ago, we hosted a Diabetes Awareness week here at Pure Jeevan. This was our contribution to the larger Reversing Diabetes Naturally movement that we blogged about. In a recent post we announced that we were interviewed by Rhio for her Hooked on Raw with Rhio radio show that airs on NY Talk Radio (formerly known as Tribeca Radio). Rhio is an amazingly talented woman; we encourage you to check out her Rhio's Raw Energy site that has a lot of helpful information about the raw and living foods lifestyle.
Rhio talked with us about all of the projects we've been working on. She was particularly fond of the All Raw Directory, but she was also thrilled about our cross-country raw food tour and the raw food publishing company that we'll be starting in the near future. Welcome to Day 3 of Raw Salad Dressing Week here on Pure Jeevan. As you'll see, I "got a little creative" once again -- and again got lucky! I'll let you watch the video for the backstory on this one, but I'm happy to report that a nice, hearty, sweet, holiday-appropriate salad dressing was created. So, check out the video, and then I'll make a few closing comments.

The My Raw Story series was a wonderful success. We had many comments here on the blog as well as numerous emails thanking us for running the extremely inspirational series. Thank you, again, to all of you who opened your hearts and shared your stories with everyone. Sharing our personal stories can bring about remarkable changes in others who feel inspired by what we've shared. In return, they too may one day share their stories to further help even more individuals. It's beautiful how we can all support and motivate one another, isn't it !
Even though the My Raw Story series has ended, we'd be very happy to run it again with more stories. If any of you have your own raw story, or know somone else who does, and would like to share it as part of a future My Raw Story series, please let us know. We are happy to do anything we can to help others share their stories, especially when doing so is a powerful way to continue inspiring others.
