Today for "Take the Time Tuesday," we'd like you to take the time to meet Mimi Kirk, whom many of you may know as the winner of PETA's "Sexiest Vegetarian Over 50" contest last fall. If you're interested in longevity, and how diet influences the way we look, act, think, and exist, then you'll definitely want to listen closely to what this vibrant woman, who is 71 years young, has to say. We spoke with Mimi for nearly an hour this weekend, and are happy to share her inspiring interview with all of you. Below, you can listen right here, or download a podcast MP3 version.

Well, we've finally done it -- made the move westward to our new hometown, Portland, Oregon! It's been nothing but the kind of high adventure befitting such a move, not the least of which was a wheel literally flying off of our car while driving (don't worry, no one was hurt) just days before we were scheduled to leave. And, of course, everything during the past few weeks wound up costing about 10x what we'd planned. ?But, we're here! ?And, we're beginning to get settled.

As always, we've got some great things on deck for this blog in the coming near term, including many interesting articles and some fun video experiments we did involving live blood and electrical grounding. We also have some new exciting web site features to roll out, one completely new raw food site to unleash upon the raw foods community, and a whole new Pure Jeevan web site design to launch. For now, though, we'll probably remain off-line for a bit longer, as we organize and unpack things.

Our Pittsburgh home remains for sale. Naturally, we'd hoped to have sold it before making this move. But, we realized that we didn't necessarily have to wait for it to sell in order to move to Portland. So, we took the great leap of faith and moved here without that step completed. (It'll certainly be a happy day when that lovely home finds its new owners and caretakers!).

Jim here again... Wow, that's an excerpt from a very fired-up Wendi, writing a few years ago about her frustration over the USDA's absolutely insane regulation that nearly all almonds sold in the United States must be treated with chemicals or heat prior to sale. I'm sure you know the story by now, so I won't rehash it here. (In case you do not, you can read about it in our original post, Wendi's Almond Frustration post (which even recounts a disturbing, related dream she had about this issue), or our last update post. It's an issue we've been following for years here.)

Jim here... As I hinted at last week, I decided to try changing things up a bit and seeing what I thought of it. The salad you see above included the first cooked food I've had in more than two years. If you look closely, you can see that I sprinkled on a few spoonfuls of black beans. Also, in the upper left corner, there's a small spoonful of quinoa. I don't want to give the wrong impression here: ?This blog will certainly remain a major go-to source for raw food nutrition information. It's just that, today, I want to talk about experimentation a little bit.

First, I think it's generally healthy to experiment with your diet -- especially when you get the sense that something isn't working in your current diet. The fact is, diet is a dynamic thing, not a static aspect of your life. It has to be this way because so many factors affect our physiology on a day-to-day basis. Off the top of my head, these include the facts that:

For today's Makin' It Monday, we're not really making something, but rather sprouting something! We tend to go through periods of time when we are sprouting a lot, consuming sprouts on salads, sandwiches, and inside whatever dishes we can add them to at the time. It seems appropriate for this time of year to start sprouting, again.

Have you ever sprouted seeds? The first time I ever sprouted, I used a nut milk bag that I kept dangling over the kitchen sink. I put some seeds into it, let them soak overnight in a bowl of water, and then rinsed them in the morning. Every time I was in the kitchen, I rinsed them again and let them drip into the sink until the next rinsing. It's important to keep the seeds moist and rinsed. It was thrilling to see the tiny little sprouts when they first began emerging from the seeds!

I knew right away that I would be filing this under our "Fun-filled Friday" bannner. Finding pawpaws is a huge treat! They're surprisingly little-known, and also very surprisingly tropical in nature. Who would think that something this delicious and exotic-tasting would thrive in so much of the non-trpoical world!? A few days ago, we'd mentioned that Wendi had done a five-day water fast as part of her early dealings with Lyme disease. This was the first time I can recall in our household anyone fasting for more than a day or so, although there may have been the odd juice fast now and again for a few days.

Thinking back, I can tell you that, all while I kew Wendi (and especially during her cooked years), such an extended fasting would never have happened because she used to get wicked headaches any time she went without food for more than a normal time period between meals. This makes perfect sense, of course, as you really do have to be in fairly good health to successfully fast -- and, during those "cooked" years, we were both extremely unhealthy! (More on the reasons for all that later, as Wendi will likely do a write-up on fasting at some point.)

Jim here... I'd like to quote a poem today. It's called "the lesson of the moth" by Don Marquis. It's from his "archy and mehitabel" series, published in the 1920s. If you're unfamiliar with the series, archie is a cockroach who types poems (in all lowercase, without punctuation) by jumping onto the keys of a typewriter. Here's the text:
