On this beautiful May Day, I am thankful for creativity. We all have a creative ability within ourselves to imagine all kinds of things.In yesterday's post, about asking myself questions in order to make changes in my life, I talked about having an image in my mind of how I wanted my life to be in the near future. I was using my creative abilities to see my future as happy, vibrant, and healthy.

Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? WOW!!! WOW!!! WOW!!! Check out the response from 40+ people from around the globe. It's a little overwhelming to see this much positive energy in one place. Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. After leaving Salem, Oregon, Wendi and KDcat drove less than an hour to the city of Corvallis where they met up with their hosts the Zander's -- Joni, Steve, Bekka, and Stephanie -- a fellow unschooling family Wendi had come to know in an online forum. It was great to be in their company and we loved them right away,? Wendi wrote. ?Their home is absolutely beautiful on a really cute lot with plenty of plants and trees around ? including the most delightful flowers that smelled divine (I think they were called Daphne).
Corvallis is the city we ve mentioned multiple times -- the city that feels like it s the right fit for us. Well, it lived up to our dreams in just about every way. It s a progressive, hip town with a lot going on. The people are friendly, the weather is beautiful, the land is gorgeous, and there are lots of unschoolers. Access to fresh, ogranic, raw foods doesn't seem to be an issue anywhere in Oregon, according to reports from the road so far. While they've been away, we've talked quite a bit each night about what they're finding -- and fresh organic produce seems pretty much everywhere out west. "The west," wrote Jim Morrison, "is the best." (Surely he was a raw foodie.)
Jon Gold, owner of the Sunny Side Up Cafe (a vegan and vegetarian restaurant there) and an unschool father, put together a little gathering of unschoolers for KDcat and Wendi. They were able to meet some local unschoolers and ask questions. There was also a gathering one day at the cafe where KDcat was able to do some art at a table with some other unschool teens. It's definitely a creative, easy-going town with some fantastic people in it!

Produce That Tests Lowest for Residual Pesticides blog post last week, we put an asterisk next to "sweet corn" and took it off our list of foods to eat. Even though sweet corn tests relatively low for pesticides, Pure Jeevan still feels the vegetable isn't a safe choice for a healthy diet. There are primarily two reasons for our decision to completely remove corn from our diets. First, of all the vegetables that have undergone genetic modification (GM), GM corn is one that has been proven to cross-pollinate with non-GM corn. Second, since corn is so plentiful and easy to grow, it has been modified to become all sorts of flavors, sweeteners, fillers, etc., in food products and many individuals have developed sensitivities to it.

Jim here (again!) A little over a month ago, we couldn t contain our excitement about an online contest to win the best job EVER ? living as caretaker of a tropical island in Queensland, Australia, on the Great Barrier Reef for 6 months (and being paid $100k for the task!).

Today I am thankful for the small things in life that often go overlooked. I'm thankful Jim made some sweet dessert last night when I wanted it. I'm thankful KDcat is having a fun time with some of her friends right now. I'm thankful that: the trash collectors just picked up the garbage (we don't produce a whole lot since going raw); the older woman across the street has started smiling and being nice to KDcat; the sun is out and the snow is melting; I have another computer job to work on for some income.
Jim here... We're at an interesting juncture here at Pure Jeevan. For the moment, we're still living a little more "in the box" than we plan to in the near future. One example of this is my personal excitement about Fridays. Oh, I suppose Fridays will always seem special to me somehow. But after years of the corporate routine, Friday remains the most welcome weekday.
Friday signifies the end of the five-day stretch during which most people do whatever they happen to do to pay the bills, to keep (raw!) food on the table, and a roof over their heads. While I know of and admire many people for whom the work week is generally meaningful and rewarding, I suspect that the majority of people go through it simply for the money. Sure, many "like" their job (or, perhaps more aptly, "don't hate it"), but I have met too few who absolutely love their jobs. (Come to think of it, I've met quite a number who actually do hate their work!)

Jim here... Wow, we haven't posted in a few days. That calls for some action! Hmmm... how about taking a look at some delicious mini pizzas Wendi whipped up the other day:
We went absolutely nuts for these little "pizzas." They were both tasty and fun. If memory serves, I believe she made them by taking slices of firm roma tomatoes, spooning on some improvised pesto sauce that she whipped up, sprinkling on some chopped basil leaves, sprinkling on some "cheese" that she made with ground Brazil nuts, garlic, and salt, and then topping each "pizza slice" off with a half cherry tomato. No recipes necessary here; just take a look at the picture & go try it!
