Over the weekend, we visited the spectacular Oregon Country Fair in Eugene and, once again, experienced a joyful and overwhelming sense of recognition that we're living in a place where people are much more accustomed to just being themselves.
Personal expression and nonconformity are so valued here that one becomes quickly enamored of the whole ambiance, which could well explain why more people come to Oregon than leave. The region seems to represent, to many, a chance to finally discover and explore an identity perhaps not completely free from outside influence, but at least free from the undesirable influences that society elsewhere seems to insist upon. Or maybe I'm misreading it all and providing just one of many interpretations.
Jim here... Since we posted Wendi's two-part series on pasta-making techniques (part 1, part 2) last week, I thought I'd follow up with an additional novel use for the spiralizer -- super-delicious, blazingly fast, ultra-low-fat sweet potato chips! We've done some really great things with sweet potatoes before. (Anyone signed up as a member of the Pure Jeevan family has likely already received our prized sweet potato pancake recipe.) But, these chips are amazing because they satisfy that unmistakable urge for crunchy, healthy snacks -- and in record time. Friends, if you have a dehydrator and sweet potato on hand, you could literally be enjoying these things in under three hours. So let's get going!
As Wendi demonstrated in the videos last week, you can easily make "rounds" using the spiralizer by simply making a vertical slice throughout your vegetable prior to placing it on the spiralizer. So, if we were looking down at the sweet potato, the cut (which goes all the way down the length of the vegetable) would look like this:

Jim's mother, JoAnn, LOVES pasta. I'm sure many of you can relate to that---pasta is a big part of the cooked diet and just about everyone loves it. When going raw, many individuals say they just can't do it because they miss pasta too much. Well, that's no longer a problem. There is a raw way to make pasta and you are going to love it if you haven't experienced it, yet!
As a gift for Mother's Day, we sent a pasta-making tool to JoAnn along with a pasta sauce recipe we created for her (see the Paradisio Pasta Pomodoro entry). To make it easier for her to learn how to create pasta, and to answer some of the emails we've been receiving about the device we used to make the pasta, we have put together a two-part video showing how to make delicious, beautiful raw pastas! You'll learn how to use two different pasta-making devices, as well as how to use a simple vegetable peeler to create delicious noodles!
It's day three and all is going okay. I seem to have a bit more energy since it's not all being sapped trying to digest complex meals. The last time I did mono mealing, I received countless emails from Pure Jeevan members who were concerned I was doing something unhealthy. Eating simply for nine days, however, is not unhealthy.
Did you know the body doesn't need a full range of vitamins and minerals at each and every meal? Somehow many of us were taught that each meal needs to be a complete balance of vitamins, minerals, proteins, fats, carbohydrates and that just isn't the case. What the body needs is a well-rounded diet, overall, to be in a balanced state. If, over the span of a month or two, you've consumed a variety of fruits, vegetables, nuts, seeds, and sprouts you will find that you've met just about all of your nutritional needs.

Of all the species on this Earth, it's weird that no other animals besides people cook their food. Similarly, of all the species on this Earth, it's weird that no other animals besides people drink the milk of other animals.

In writing and researching our previous two posts, we came across a number of articles mentioning the benefits of chlorophyll for those who have been exposed to radiation. Nothing seemed to go so far as to call chlorophyll a cure-all. But, many sources cited clear benefits -- and it's great to read about potential preventative measures and treatments available through natural means. Jim here... It's not often that we're able to recommend a movie that's perfectly relevant to the raw food lifestyle. But, if you're a raw vegan and haven't seen The Curious Case of Benjamin Button, we highly recommend this film. Not only is it wonderful, but it's also, for much of the film, a nice metaphor for living the raw foods lifestyle.

If you've been following this Nadi Balance series, you're probably as fascinated as we are with the body and the myriad ways in which we can peer into our physical health through observation and experimentation. Yesterday, we learned about a blanace being necessary in the human body between fatty acids and sterol fats. (This is but one of the many balances we'll eventually talk about under the larger umbrella of Nadi Balance.)
