Our friend Kevin Gianni is turning 30 this weekend. When you do the math, that means he was born December 7, 1978, which was pretty much the apex of the disco era in America.It's no wonder the man struck the above pose in our back yard; dude's got the Village People in his blood! I've done it, I've done it, I've DONE IT!!!? I've perfected a recipe for raw vegan potato pancakes! My friend Melissa shared her potato pancake recipe with me and, like always, I had to play around with it (I rarely go by a set recipe). Had it not been for her original recipe, I wouldn't be writing this post! So, thanks, Melissa!!

Jim here... As I may have mentioned a while ago, I joined a gym recently. I figured, with Wendi and Bailey living on the other side of the country, I might as well find something healthy to do with my alone time until I'm able to join them soon (aside from my seemingly never-ending quest to rid our household of 13 years of rampant accumulation). I joined on a whim, actually. There's a gym near my home called Planet Fitness. Honestly, I have no idea how they make money. A membership costs just $10/month -- and it's a Wal-Mart-sized place, too, absolutely packed with state of the art machines. (Actually, it's a franchise, so there could very well be one near you.)
In any case, it had been a while since I'd been inside an actual gym. I've certainly remained relatively active, of course. But being in a gym is a little different -- and certainly has its plusses and minuses. On the minus side, I've always kind of felt that, if you add up all of the time it generally takes to get (1) get ready to go to a gym, (2) drive there, and (3) drive home -- say, a half-hour, total, for those things -- then you could probably better invest that time in just going for a run for a half-hour, leaving straight from your home. From a time management standpoint, I'm not crazy about gym memberships (meaning not that physical exercise isn't worth the investment of time, but rather that there are ways to accomplish the same results in much less time).

Today we welcome an up-and-coming raw chef, Sam, from DebbieDoesRaw for the first of Pure Jeevan's new Makin' It Monday "Guest Raw Chef" editions. Sam will demonstrate how to make a simple Peach Pudding, which she tells us is the invention of her very good friend Anthony from Rawmodel.com. We think Sam did a super job! Don't you ! For today's Makin' It Monday feature, we'd like to present "Salsa Campechano." We'll have to admit, though, that we do not speak Spanish. So, we have to give some credit to Google's online language translator. When we went to name this recipe, Wendi suggested that this is a "manly" dish (since I created it). However, we didn't find the perfect Spanish word to fit the recipe.Then, considering the walnuts in the recipe, Wendi suggested that perhaps "hearty" was a better adjective. Google returned the Spanish word campechano for this, and we immediately thought: Yes!, that sounds just perfect!? So, here's an amazing recipe for you. It's a hearty salsa recipe, but I actually like to eat it as a soup.

As we have mentioned here and there, our home (affectionately called "The Luck House") is currently for sale. Once it sells, we will be hitting the road full-time, educating people all across the country about the benefits of the raw foods lifestyle. Until then, we're spending a good amount of time going through the motions of selling the place. It's a wonderful home!!!?
Today is Wendi's Birthday, so please join me in wishing her all the best for the coming year! Since this was our first year in Portland, just an hour-and-a-half's drive to the Pacific, I'd known for ages what we were going to do to celebrate Wendi's birthday -- a picnic at the beach, of course!
A few days ago, the weather reports for the central Oregon coast cities unanimously agreed: Rain! ?But, after living here for a few months, one learns that a forecast of rain *never* means that it's going to rain all day long. Rather, it just means that it'll likely rain at some point, or at many points, in a given day. The rest of the time, it could very well be perfectly sunny outside!

Recently, I saw an article advocating a ban on banana consumption based on the premise that, if you don't live in the tropics, you have no business eating tropical fruit. Pointing to transportation costs and the related environmental impact of such transportation, the article argues that, by eating bananas, you're contributing to the destruction of the environment.
Many of you know some of my story of healing. I suffered with Polycystic Ovarian Syndrome (PCOS) since I was a young teenager. Over the years, I began putting on more and more weight until I was nearly morbidly obese. I learned a lot about PCOS and how there is always an accompanying issue with Insulin Resistance.
Countless overweight women search the Internet looking for help in dealing with PCOS, hoping to find a natural cure to the harsh medications often prescribed that tend to cause other health concerns in our bodies. One of the most often asked questions is from women who have a pretty good understanding of PCOS. They want to know if they need to be careful with fruit consumption if they have PCOS and are trying to lose weight.

Over the weekend, we visited the spectacular Oregon Country Fair in Eugene and, once again, experienced a joyful and overwhelming sense of recognition that we're living in a place where people are much more accustomed to just being themselves.
Personal expression and nonconformity are so valued here that one becomes quickly enamored of the whole ambiance, which could well explain why more people come to Oregon than leave. The region seems to represent, to many, a chance to finally discover and explore an identity perhaps not completely free from outside influence, but at least free from the undesirable influences that society elsewhere seems to insist upon. Or maybe I'm misreading it all and providing just one of many interpretations.
