I've done it, I've done it, I've DONE IT!!!? I've perfected a recipe for raw vegan potato pancakes! My friend Melissa shared her potato pancake recipe with me and, like always, I had to play around with it (I rarely go by a set recipe). Had it not been for her original recipe, I wouldn't be writing this post! So, thanks, Melissa!!

It turns out that planning a 40-day/40-night cross-country trip is a LOT of work! (Who knew ??!) Wendi and I seem to be spending every waking moment planning this thing, which may explain why we've missed a day or two's posts here on Pure Jeevan. But, we're gearing up for something absolutely amazing -- and it all starts next week!? So, if there is a quiet day or two this week, just keep in mind that the rawsome content is going to be absolutely insane here starting late next week and continuing through March into early April!
Today, we wanted to extend a huge thanks to Jeff and Helen Rose, owners of Natural Zing, for offering to sponsor the snack portion of Wendi and KDcat's trip. Jeff and Helen understand that, being a raw foodie, it can be a little tough to be on the road for such a long time. Sure, Wendi and KDcat will probably be snacking on a lot of fresh fruit, but it's also nice to have some packaged raw goodies as well while you're traveling. So, Wendi and KDcat will be loading up on some of their favorites -- botija olives, Love Force breads, Gopal's power wraps, some nut butters, some raw chocolates, and more. Jim here... Exactly one month ago today, I announced my intention to do a month-long trial of a low-fat raw vegan protocol largely based on the well-known 80-10-10 diet. I posted a half-way point update on May 15th, and now here we are at June 1st already. So, are you ready for the thrilling conclusion
As I've stated before, I went into this experiment rather hard-core, with one full week of zero overt fats, and then gradually introducing a few richer ingredients (although keeping within the 10% fat ceiling). I found much of the past month to be an exercise in restraint and self-control, similar to the issue many people face when going raw while the rest of the family is still eating cooked foods.However, it got significantly easier as time passed.

Today we talk about ways to lessen one's chances of developing dementia, aside from dietary changes. Other than eliminating foods from our diet that may hinder brain function, or adding foods that enhance brain function, what can we do to keep our minds sharp as we age?
The first action step you can take to keep your mind healthy is to physically exercise the rest of the body. By keeping our limbs and muscles active, we are not only enhancing the flow of oxygen throughout our bodies, we're continually working our brains, as well. Every move you make requires a message from your brain to be sent to your muscles. So, the more you move, the more you're exercising that part of your brain.
The mono meals ended and I did create that beet pasta with alfredo sauce that I was dreaming about. So, here's the recipe:

Welcome to Pure Jeevan's "Juice-a-Day Jamboree"! You're probably wondering, "What IS Pure Jeevan's Juice-a-Day Jamboree, anyway "? Well, it's simple:? It's an ongoing, informal, loosely organized "event" centered around juicing. Think of it as an interim step between (1) any kind of diet or lifestyle, from SAD to full-on raw, that does not include much regular juice, and (2) an all out juice feast where that's ALL you'd consume for a period of time. Basically, we're saying, "Let's just make this simple and accessible for everyone. Let's just make a goal to simply drink more fresh juice!"
Wendi and I have been thinking a lot about incorporating more juicing into our lives lately (which is something we've done off and on over the years but never stuck with long-term). One thing holding us back from doing it more often is the time requirement. When we juice, it usually takes a half hour or so from start to finish. I know it doesn't seem that complicated, but I suppose it's just the whole process of setting up the juicer, washing and peeling the produce, juicing it, setting the juice aside while we clean the juicer, doling out the juice into glasses, cleaning up the mini-mess that makes, and then sitting down to actually enjoy the juice.
