Okay, so here's a recipe that may make you raise an eyebrow. "Baked " "Rice " Well, it's not really baked and there isn't really rice in it, but it tastes like a baked rice and veggies dish! I created this one day by mistake and we all loved it.

Baked Rice and Veggies

2 cups pureed sunflower seeds

When you're young and learning the letters of the alphabet, anything that starts with the same letter as your name becomes really special. Well, ever since I was a child and saw a Winnebago RV with the giant "W" on the side, I've been enchanted with the idea of one day owning one and traveling the world (at that age, I didn't realize I'd have to cross oceans to see everything).

If you've been following us for a while, you'll know that I was bringing that vision to life. It took years of convincing, but Jim was finally ready for such an adventure and together we began making plans. For more than two years we've been preparing to tour the country, while teaching about raw foods along the way. Our lives changed so dramatically when we found a way to heal our bodies (and more), a way that can also help others, and we just couldn't sit still. We feel called to spread the word about the raw food diet so others can at least hear that there's another way, that there's something different to try in their quest for health. I knew that crossing the country in an RV, planting the seeds about a raw food diet along the way, would be an efficient way of spreading the word.

There are many things to be thankful for in this life, but for our very first Thankful Thursday entry we'd like to stress how thankful we are for the vibrant health we now have. Consuming only fresh, organic raw fruits, vegetables, nuts and seeds has allowed our bodies to heal from the inside out. For this we will forever be thankful. In fact, we are so thankful that we are here, as Pure Jeevan, to spread the word about how raw, life-filled foods can bring you renewed health!

Jim here (again!) A little over a month ago, we couldn t contain our excitement about an online contest to win the best job EVER ? living as caretaker of a tropical island in Queensland, Australia, on the Great Barrier Reef for 6 months (and being paid $100k for the task!).

The deadline has come for this and, as we promised, we BOTH applied. You saw my video, below. Here's Wendi's application. Once again, we hope you'll view the video & rate her a 5!!! You can click the screenshot above, or go there directly via this link. (As I said below, I ve heard that the rating system can get a little screwy on that site ? that you need to wait for it to load and maybe mouse over the rating part first. But, a 5-star rating would really help, as would the traffic, even if you don t watch the entire video.)

Today's Jim's birthday!

This photo is from Saturday night. We had a sleepover birthday party to celebrate Jim's big day. The Pure Jeevan home was filled with loving friends, amazing raw food dishes, and vibrations from some fun group drumming!

Happy, happy birthday, Jim! May all your wishes come true and your life always be filled with health, love, laughter, and friendships! I love you!

The new Vitamix container arrived within two days (they knew we were hard core Vitamix users and put the container in the mail the day we ordered it to replace the broken one). So, what was the first thing we made in our shiny new container (after washing it, of course)? A DELICIOUS coconut smoothie!

Jim here...? Ahh, yes, you noticed, didn't you ? We'd started posting a video series called "Know Your Food" recently, promising to shoot for it being a DAILY series -- only to have its presence totally disappear as though Harry Houdini himself had taken control of our blog.
?
Well, we just wanted to post a quick explanation for you. Short answer: Know Your Food is coming back SOON!? We've been at work on so many amazing projects here at Pure Jeevan, a few of which we needed to complete prior to officially launching Know Your Food in a big way.
?
To put it metaphorically, Pure Jeevan can be thought of as an enormous hang glider. With hang gliding, you have to make sure everything's in order before jumping from the cliff and soaring freely above the landscape. (Ummm, not that we've ever actually hang-glided. What IS the past-tense of hang-glide, anyway )? So, we're just checking the rigging and so forth right now.
?
When we do step off that precipice, though... wow, you won't believe the cascade of huge announcements we'll have for the raw foods community. Know Your Food (which will return soon, prior to all of the huge announcements we have in store) will return in all of it's YouTube-esque glory very soon. So, thanks for your patience in that matter!
?
One more thing:?

Our friend Kevin Gianni is turning 30 this weekend. When you do the math, that means he was born December 7, 1978, which was pretty much the apex of the disco era in America. It's no wonder the man struck the above pose in our back yard; dude's got the Village People in his blood! So, it would be really nice if you boogied down to his site, www.RenegadeHealth.com, and wished him a happy birthday. He's also on Twitter -- cast a shoutout to: @KevinGianni.

As many of you know, I'm more of an intuitive eater than anything else. I eat what I intuitively feel my body needs most of the time. Well, for the past two weeks what my body has been asking for is cauliflower. I went through a cauliflower stage sometime last year, and it seems I'm back to eating that lovely white flower veggie again!

At first I was making mashed cauliflower (like? mashed potatoes) and keeping the recipe very simple. I've made complex versions of the mashed cauliflower before, but I was really drawn to a more simple taste so all I was adding was some olive oil, salt, and a tiny bit of macadamia nuts. Yesterday, however, as I was cleaning the cauliflower (since my body was telling me it wanted more of it), I had a sense that I wanted something more vibrant, more fun than simple mashed cauliflower. So, I followed my intuition (picking up whatever I felt my body wanted to eat with the cauliflower) and here's what I created...

I ordered a case of organic, fresh-picked, perfectly ripe oranges!! Yay! They were shipped in less than 24 hours of my order and they should arrive soon! I asked for some grapefruits in there, too, even though I haven't really liked the taste of them in the past. I'm thinking that fresh ones will taste a lot better--not to mention that I never tried an organic one before. If I still don't like them, Jim and KDcat will eat them. ;-)

If you want to check out the grove from where I ordered them, here's a link: http://www.flnaturalcitrus.com/. I emailed with Dave, who was very nice. It's fun to get to know the people you are getting your food from, isn't it? This past spring, summer, and fall we were members of a CSA (community supported agriculture) farm. The produce was amazing and it was so fun to actually see pictures of the farm workers and hear about the daily ins and outs of life on the farm. If you've never heard about a CSA, maybe you'll want to see if you have one in your local area this coming spring.

Finally, some super news to share!? On Monday, after a l-o-n-g wait, Wendi finally had her appointment with a actual LLMD. (That stands for "Lyme Literate Medical Doctor."? If this and the news of Wendi's Lyme Disease is new to you, check out this post.)

I'll cut straight to the good part: Her prognosis is excellent! Yes, she's still in a world of pain and misery at the moment, but he believes (based on her blood work and her symptoms) that we've caught this early enought to fully eradicate the Lyme. (At least, that's how I understand it. I'm actually not clear on whether Lyme is ever 100% eradicated, or if it's just forced into dormancy or irrelevancy. Perhaps Wendi can clear that point up later.)
