I responded to a similar question a while ago in an online forum. This issue comes up a lot, acually, so I figured I'd provide our response here on the blog rather than simply through an email reply. Here's that response, reworked a bit for our blog:

Day 9: It's the final day of Navratri, often the largest day of celebration. On this day in India new businesses are started, children begin their formal education if they are at the right age, and past regrets (and many times debts) are left behind. It's a new beginning, fresh start, and is celebrated as such. Today, Pure Jeevan is celebrating in a big way, too!
Yesterday, Jim handed in his resignation where he works. He was closing old books, imagining new ones, and today markes his first step of his new life. He gave the office one month's notice, after which he'll be here in Portland. Our new life has officially begun!

Here's another one for you. Meet Hatice Yavuz, co-owner along with Chef Mehmet Ak of Cousin's Incredible Vitality, another great raw destination in the Windy City. "Hatice" is a Turkish name, in case you're wondering. The "c" is pronounced like a "j" -- so, her name sounds like "huh-TEE-jay." Our interview with her ran a little long, so I'm going to have to break it into two parts. Here's part one:

Wendi shot this video a few weeks back in San Francisco during Pure Jeevan's recent cross-country tour! I am extremely thankful for sleep. I can't imagine striving to sleep only four hours a night. Jim always says he wishes he didn't have to sleep, that he's wasting his life when he sleeps. For me, I've always loved sleeping. I feel so great after I wake up. Not only that, I thoroughly enjoy dreaming. I wouldn't want to miss out on the amazing dream life I've been able to enjoy while I sleep.
Jim here... Allow me to think out loud, philosophically, for a few moments, will you? I have a gut suspicion about something, but need to think it through a bit here. I'll start with a quote:

Well, that's just not the case for the person that we'd like to introduce to you today. This person's name describes the individual she is as well as the community that she creates.
