In August of 2007, I was on the verge of an emotional breakdown. My entire world had changed since I adopted the raw food lifestlyle. My body had released nearly 100 pounds of unhealthy weight, my health had dramatcially improved, I ended unhealthy friendships, I released a lot of stored emotional memories from childhood abuse, I realized that I wasn't living in a location that met my needs anymore, and so much more. I can't think of any aspect of my life that hadn't changed, in one way or another, over the year and a half that led up to my urgent need for a retreat.

Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? WOW!!! WOW!!! WOW!!! Check out the response from 40+ people from around the globe. It's a little overwhelming to see this much positive energy in one place. Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. Jim here... Since many people have asked me how she liked the surprise gift, here's a quick, unedited video taken last Saturday on Wendi's birthday. We had gone to the park that evening to hang out and catch some fresh air. I took a few minutes to ask her about her day, and thought I'd share this with you.If I showed you the video of her receiving the gift that morning, I'm afraid all you'd see would be tears all around the dining room table. (We were all rather emotional about it.) So, take a look at this video for now. Wendi said that she wanted to write something here as well. So, that will no doubt be coming soon.
By the way, at the end of this video, Wendi mentions another video of a man we interviewed earlier that day on Wendi's birthday. I was going to edit some of that in, but we decided to run that video here on its own this Thursday because it addresses a question Wendi gets quite often. You'll love that video, as it's a great testament to the power of raw foods. For those of you who've been following our plans for a few years, you know we've been preparing for a cross-country tour for a long time. The plans have expanded, contracted, changed dramatically, but the core of the idea has always been there: we plan on relocating to a new city and we need to find the right place for Pure Jeevan to settle. In order to do that, a big cross-country tour is in order. So, the exciting news is that we're leaving in a couple of weeks to check out some of the cities/towns we're thinking might be a perfect fit for Pure Jeevan! The sad news is that all of us can't make the trip. Jim will be holding down the fort here in Pittsburgh (i.e. the house still hasn't sold and he still needs to keep his corporate job so we can pay the mortgage).
As promised, here's our interview with Leigh Crizoe, Rhio's partner and co-host of the Hooked on Raw Internet radio program. We think you'll love this interview, as it shows another perspective on raw foods and also gets into an interesting detox program that you may not have heard about. After 9/11, the New York City residents and workers close to ground zero breathed in highly toxic particulate matter for a long span of time. Rhio and Leigh live just blocks from the site, and both experienced respiratory troubles as a result -- especially Leigh, whose sweat began to stain his white t-shirts black! (Yep, you read that right: You'd actually sweat black! This happened to many ground zero workers, in fact.)
Who had the detox answer for them ?... Would you believe L. Ron Hubbard and Tom Cruise ? Apparently, detoxification was an area of high interest to Hubbard, the founder of scientology, who developed an intense regimen of saunas, vitamin supplements, and oils, all specifically for the purpose of ridding the body of toxins. As many of you know, I'm more of an intuitive eater than anything else. I eat what I intuitively feel my body needs most of the time. Well, for the past two weeks what my body has been asking for is cauliflower. I went through a cauliflower stage sometime last year, and it seems I'm back to eating that lovely white flower veggie again!
At first I was making mashed cauliflower (like? mashed potatoes) and keeping the recipe very simple. I've made complex versions of the mashed cauliflower before, but I was really drawn to a more simple taste so all I was adding was some olive oil, salt, and a tiny bit of macadamia nuts. Yesterday, however, as I was cleaning the cauliflower (since my body was telling me it wanted more of it), I had a sense that I wanted something more vibrant, more fun than simple mashed cauliflower. So, I followed my intuition (picking up whatever I felt my body wanted to eat with the cauliflower) and here's what I created...

For today's Makin' It Monday feature, we'd like to present "Salsa Campechano." We'll have to admit, though, that we do not speak Spanish. So, we have to give some credit to Google's online language translator. When we went to name this recipe, Wendi suggested that this is a "manly" dish (since I created it). However, we didn't find the perfect Spanish word to fit the recipe.Then, considering the walnuts in the recipe, Wendi suggested that perhaps "hearty" was a better adjective. Google returned the Spanish word campechano for this, and we immediately thought: Yes!, that sounds just perfect!? So, here's an amazing recipe for you. It's a hearty salsa recipe, but I actually like to eat it as a soup.
There's an old saying that "What Happens in Vegas, Stays in Vegas." But we're not ones for keeping secrets. So, here's the low-down on Wendi and KDcat's time in Sin City -- straight from Wendi's travelogue, once again!
We drove to Las Vegas from California, and loved seeing the change as our surroundings became a desert. The snow-capped mountains are such a beautiful contrast in CA, but especially here in Nevada where it's so dry and hot!
This stop was longer than expected, since we decided to change our schedule a bit in order to get some more relaxing time in--and also to allow KDcat to have some fun that didn't involve raw foods or Pure Jeevan activity. ?We decided to hold off on visiting a date farm and the grand canyon (two activities we'd had planned for this leg of the trip) until Jim could do those things with us as a family. We especially missed him during this part of the trip, because he's always wanted to see what Vegas is like in person.
