Ever since developing a personal conviction a few years ago that following a raw vegan existence was the best lifestyle for me, I've lived somewhat in conflict with the day-to-day corporate business environment in which I make my living at the moment. As we've directly stated many, many times, we're in the process of changing all of that. But, making such a huge change takes a long time because careers are in many ways very anchoring. We may write more about that process because it's true that going raw (or, really, adopting any kind of diet outside of what most other people eat) can lead to significant changes in your life. Between Wendi and me, I think we've gone through pretty much all of them, and there's certainly value and relevance in sharing most of those things here. Today, though, I thought I'd share what I call my "$75 Salad Story."
In the business world, "networking" is among the more prevalent activities anyone does. It's pretty much always going to involve food , right? It's always a breakfast briefing, meeting a client over lunch, or attending a dinner party (complete with a cocktail hour). ?The deck is more or less stacked against you at these things because, let's face it, they're usually set up to provide what most people perceive as a pleasant experience. And, quite often, that means a certain degree of culinary decadence / indulgence -- invariably at venues that have never heard of raw chocolate or raw apple pie (which, to me, is 10x more appealing and exciting than the ubiquitous "chocolate fountain").

Getting Lyme Disease after regaining my health on the raw foods diet was a tough thing to accept. How could a body cure itself with a raw food diet, yet then fail to even recognize and destroy the Lyme bacteria? So many individuals have recovered from awful diseases, including cancer, by eating a raw food diet. Why, as a raw foodist, has my body been unable to easily eliminate this lyme disease?
I know Jim and I weren't the only ones wondering this. Many of you have voiced concerns, as well. Questions have been asked about how healthy my raw diet has actually been. Have I been cheating and eating cooked foods? Have I been eating too many packaged raw food snacks? Am I drinking alcohol? What have I been doing *wrong* with my diet in order for this to happen in my body? Here are some answers:

Jim here with a weird little story for today... I was at a business seminar early this morning and someone I know came up behind me at the buffet and said, "I'm getting in line behind you to see what you eat. You've lost weight and I want to lose weight, too."
"Well, it's no secret," I replied. "Just chow down on all of this great fruit they have." (I'd already piled my plate high with honeydew, cantaloupe, pineapple, and strawberries.)
This pie is amazing and exactly like a traditionally cooked pumpkin pie! I took a few different pie recipes and altered them until I came up with this recipe.

If you like raw cauliflower and fresh mint, I recommend you try this dish! Jim and KDcat don't like raw cauliflower much, so this dish wasn't a big hit with them. I, however, consumed the entire dish before the end of the day! I LOVED it!

Jim here... Just a brief, fun post for the weekend... We just saw the movie Scott Pilgrim vs. the World a few days ago. ?It's a great movie, for many reasons. But, vegans will get a real kick out of one scene involving a character named Todd Ingram, who has super powers. ?Why? ?... Because he's a vegan! ?We won't spoil the scene, though. But, if you're a vegan, or know a lot of vegans, you should get a pretty good laugh from this! I think they nearly had to throw Wendi and me out of the theater, as we were laughing so hard (especially Wendi). ?Enjoy. :-)
Continuing with our Taco Week, here's a quick and easy (and delicious) salsa recipe. You can really have a lot of fun with salsa, and can get highly experimental if you like. Almost anything tastes great in salsa. This one is fairly basic, so feel free to spruce it up with some of your favorite ingredients. On March 6, Wendi and KDcat arrived around dinner time at their next location, Grants Pass. We've known their hosts as online friends, so it was a real treat to meet them in person. Rebecca Leaverton, her hhusband Dominic, and their twins Aubrey and Sebastian live in a beautiful home in one of the more beautiful places W&K have visited in Oregon (and that's saying something, as EVERY location in Oregon has been absolutely beautiful). Grants Pass is surrounded by the most breathtakingly gorgeous mountains, close and ever-present no matter where you are in the city. If we ever do decide that city living isn't for us, Wendi said she'd love to live in the mountains surrounding Grants Pass!
Here's some video... In the first clip, Wendi shares a raw traveling trick she came up with -- kind of a high-energy, super-fast sandwich. Then Rebecca (aka SuperfoodGirl -- from www.SuperfoodGirl.com) demonstrates one of her favorite pieces of kitchen equipment, the V Slicer. (Wendi loved it and says we need to save up and get one when she returns from the trip.) And then we couldn't resist a few moments of footage of Rebecca's twins out exploring the kale and wheat grass in? theback yard.

There are many things to be thankful for in this life, but for our very first Thankful Thursday entry we'd like to stress how thankful we are for the vibrant health we now have.
