Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? WOW!!! WOW!!! WOW!!! Check out the response from 40+ people from around the globe. It's a little overwhelming to see this much positive energy in one place. Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. I wrote on Monday that today (Thursday), we would be discussing mint here -- specifically, harvesting some late-remaining mint from our mint bed (shown above in all its glory) and making something with it. I failed, however, to take into account that it's been getting darker earlier and earlier these days. By the time I was able to get outside and talk about mint, it was just too dark.

So, I thought I'd forego the video, and just write up some minty facts to freshen up your Thursday. To begin, I would highly encourage anyone who is new to gardening, and wants some early success, to experiment with mint (including spearmint, peppermint, and the various varietals available here and there). I can almost guarantee that you'll have some wild (and I do mean wild!) success, and will soon enjoy more mint than the law allows. It's so easily grown, and spreads around so easily (via its root system), that it would almost be considered invasive if it weren't so darned desirable and fragrant. (It's tough to walk past a mint bed without snatching up a leaf, rolling it between your fingers, and inhaling the scent deeply.)

I'm almost hesitant to talk about raw food parfaits here because, well, if the government found out how unbelievably healthy and ENJOYABLE parfaits are, I'm sure they'd make them illegal. But, I'll take a chance...

Nadi Balance: Part IV...

Today, for Thankful Thursday, I want to focus on a raw food related subject: Raw Recipe Books! Without the many mouthwatering, visually appetizing recipes that have been created and published, I don't know if I'd still be living a raw food lifestyle at this time.

About two years ago, when I made the decision to transition into a raw food diet, there were some fantastic raw food recipe books available. A few years before that, when I tried raw for the first time with a dear friend of mine, there were books available but none of them were truly gourmet meals. It's amazing how much things change in just a few years! The newer books are filled with colorful pictures of the most visually stimulating foods, which never looked like simple chopped up veggies arranged nicely on a plate. We have a page with many raw recipe books listed, if you'd like to see some of the ones that are available.

Do you need to be 100% raw to release excess weight and regain your health There's no difinitive answer for that question because we are all unique. Sure, our bodies function pretty much the same way, but there are still enough differences that make it difficult to answer a question like that for it to be true for every single individual.

Most of us have heard of, or know, someone who doesn't eat a healthy diet, who smokes cigarettes and/or drinks alcohol, doesn't get enough rest, and also lives a stressful life---yet that person still has a healthy body and is over 80 years old. People like that seem to have resiliency built into their genes. Sure, who knows how long a person with such resilient genes could live or how vibrant a life that person could enjoy with a healtheir lifestyle. But, the fact remains that it seems no matter what a person's lifestyle is like, if you are born with resilient genes you are pretty much invincible to most illnesses.

A majority of the population isn't born with such impressively hardy genes, however. Most bodies can withstand the stresses of an unhealthy lifestyle until middle age. At that point, however, the body begins to show signs of ill health (excess weight gain, aches and pains, and the start of many diseases such as diabetes or high blood pressure). For a majority of those individuals, some healthy lifestyle changes can make a huge difference. Many individuals regain their health simply by changing their diets to include less fat and more vegetables, and by increasing their amount of exercise. Sure, it's a bit of work to make such changes, but if many people are committed to improving their health those simple changes can make a drastic difference in their lives.

You thought our "Know Your Food" series was dead ?!!? (Or, if you're a new reader, maybe you don't know what "Know Your Food" is yet!) Well, we've been poking around in the archives this week and discovered THREE lost episodes. This is HUGE... It's like one of those stories you hear every few years about some rare Hollywood film being discovered in a vault somewhere (laughing so hard)!

Over the next week or two, we'll be posting these three episodes. Today's episode is PUMPKIN, starring Wendi and her guest Ella (daughter of Melissa and Dave, who run the FoodUnderFoot blog we linked to recently). Once these missing episodes have been aired, this will usher in the dawn of a never-before seen level of production values for the Know Your Food series. A Bit of India in Pittsburgh s Back Yard?

During an intense personal journey in recent years, I ve discovered that the more I m able to know my true self, the more my perception of the world changes. As a result, my surroundings have changed as well ?people, places, directions. At one point, internal and external changes happened so rapidly, it was difficult to fully process anything; I felt overwhelmed.

Amid urges to explore so many new directions, all at the same time, it became impossible to focus. My initial instinct was to flee to India, where I could peacefully stay at an ashram and process all that was transpiring in my mind. Although circumstances kept me from traveling abroad, I knew I needed to simplify. That s when I remembered an old issue of Point of Light I d kept. I dug it out and quickly flipped through the pages? There it was: Peaceful Valley Ashram & Retreat, located just north of Pittsburgh!

Rita Romano, author of the widely available book Dining in the Raw and executive chef for many years at the Hippocrates Health Institute, is a true pioneer of the raw movement. Here are more pictures of some of the foods we've been eating. Over the past year, we've pretty much been eating simple foods (except for the time I was preparing meals for the Raw Food Retreat). However, recently KDcat has been doing some extreme yo-yo eating between raw foods and packaged/unhealthy cooked foods. The back and forth has been causing her to experience a bit of a tummy upset. So, I've decided to make our meals a bit more exciting for her---so she'll possibly not feel so tempted by all of the colors and artificial flavors of the packaged "foods" she's been eating.

Wow, that's an excerpt from a very fired-up Wendi, writing a few years ago about her frustration over the USDA's absolutely insane regulation that nearly all almonds sold in the United States must be treated with chemicals or heat prior to sale. I'm sure you know the story by now, so I won't rehash it here.
