Okay, my Raw Fu 100 Day Challenge is set!

I'm going to transition to the 80/10/10 version of raw. I'm doing it gradually, however. For the first 10 days, I'm eating no fats before dinner. Then with dinner, I'll eat as much fat as I desire, but I will be conscious of how much of it I'm consuming. For the second 10 days, I'm going to continue the same as the first week, but I'm going to reduce my fat in the evening to half of what I normally would eat. I haven't made set plans for the final sets of ten days, but I want to be following 80/10/10 by the beginning of the final week.

Why 80/10/10? Because when I read about it, and I talk with others who follow it, it seems to make sense and work for others. After almost two years of raw foods, I am doing great with 90 pounds left behind, but I've been stuck at a weight that isn't really my ideal (I'm currently 137 pounds and I'm only 5'4"). I'm happy with myself, but my goal is to be as healthy and vibrant as I can be, to live a very long, fulfilling, energetic life.

Jim here again... Wow, that's an excerpt from a very fired-up Wendi, writing a few years ago about her frustration over the USDA's absolutely insane regulation that nearly all almonds sold in the United States must be treated with chemicals or heat prior to sale. I'm sure you know the story by now, so I won't rehash it here. Hi there, lovely Pure Jeevan family! I'll be away from the computer for a month, working on some deep healing. It's time to go within and really hear what my body and spirit are saying.

Today we'd like to introduce you to one of the sweetest, most creative, and passionate raw foodists we know. She's petite, pretty, pleasant, powerful! She continually shares her knowledge about the raw food lifestyle with others and educates many individuals about our human rights when it comes to the foods we grow and consume. She's up on the latest regulatory activities relating to health and diet issues going on within the US government, and speaks out when our rights are in jeopardy of being taken away.

Here's an update from Wendi. I think this can be considered, with 99% confidence, the big announcement:

Of course, there's that 1% chance that something unexpected will happen. But, Portland feels right. It always has for us; we nearly moved there in the late 1990s. We had books on Portland back then, and I was buying their newspaper each week to hunt for jobs. It just never panned out, though. I suppose we were meant to live in Pittsburgh for a spell. It would be easy for me to list many reasons why Pittsburgh served a purpose for us. But, yeah, I think we're Portlanders at heart. So much about that city resonates with us. It'll be a homecoming, for sure! I want to reiterate a few things that I'd written in comments recently, slightly clarified in places.

After making a 'batch' of green smoothies, what is generally considered an appropriate serving size?

Thanks for the question, Gary!? I don't think I can give an across-the-board answer to fit everyone, since we're all so wonderfully different. The answer would have to take into consideration various factors, such as:

A month has gone by since my last health update. At this point, I consider myself healed of lyme disease! In the past I asked the lyme specialist doctor if there's a way to test to see for certain the lyme is gone, but he said there isn't. So, I go on my inner wisdom, which tells me that it's gone and now I simply need to continue healing from all that the lyme brought with it.

We're still not comfortable sharing what we've been learning and doing to help move my body into an even healthier state, but it's obviously working. I've been able to go back to daily living, for the most part, without much assistance at all. I've organized the house again (Jim and KDcaT were busy caring for me and the house wasn't the top priority for the past half a year), caught up on all of the laundry, responded to all of my email that had been piling up, and I've been able to be more social again. The biggest improvements are that I can now prepare my own food without experiencing any pain, and I can dress myself with only minimal assistance at times! BIG improvements!

For today's installment of Makin' It Monday, we wanted to share something that we've been making a lot of lately. It's so simple, yet so delicious and refreshing. Here's the recipe:

  • 2 cucumbers
  • 3 large stalks of celery
  • 1 handful of cilantro
