Wow, I just took a gander at the "Best of Raw" web site and saw that Pure Jeevan is nominated for all sorts of great things -- singling out Wendi, me, Pure Jeevan, this blog, and the All Raw Directory over at least eight different categories!

To summarize yesterday's post, even though this sounds dramatic, the truth is: Wendi was dying. The first doctor essentially sent her home saying there was nothing wrong. The second doctor confirmed she had Lyme disease, but was too late for his method of healing, since the Lyme had already become chronic at that point. He could only offer understanding of her situation and a trial and error method of conventional medications, which rarely (if ever) heal Lyme patients. A supplement that many raw nutrition gurus recommend as essential to health for all people was actually putting Wendi's body, already struggling with Lyme bacteria, into an extreme state of distress. And finally, our own knowledge of health, diet, and healing (even though extensive and accumulated over 30 years) wasn't adequate for healing Wendi's body of Lyme, either.

I am very fair-skinned, with light eyes and medium-colored hair. For as long as I can remember, the sun made me feel ill. The older I got, the sicker I'd feel. I felt uncomfortable in the heat, my skin would feel all prickly, I got horrible headaches, and sometimes I even got sick to my stomach. I've always loved being out in nature, but on really sunny days, it bothered me and I'd try to stay in/near the woods and the shade.
Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? WOW!!! WOW!!! WOW!!! Check out the response from 40+ people from around the globe. It's a little overwhelming to see this much positive energy in one place. Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. Jim here... Wow, it's Monday, April 27! Let's do something different today: Let's celebrate Monday instead of bemoaning this day that represents the taditional start of the dreaded work week. Why? Because it's our sincere hope that whatever you do in your work week is a labor of love. And, if you're not quite there yet, then celebrate the fact that you WILL be there sometime soon. For us, it means another week of working to inspire you to achieve optimal health -- and that's not "work" at all; it's actually FUN!
So, without further adieu, let's jump into this week's fun. Our good friends Melissa and Dave Sokulski have launched a site recently called FoodUnderFoot ("unleash the energy of wild edibles"). Even in it's young seedling state, I think it's already a fascinating site, and promises to become an encyclopedic web destination for anyone interested in foraging wild edibles. The new Vitamix container arrived within two days (they knew we were hard core Vitamix users and put the container in the mail the day we ordered it to replace the broken one). So, what was the first thing we made in our shiny new container (after washing it, of course)? A DELICIOUS coconut smoothie!
Those consuming a raw food diet sometimes use a dehydrator to prepare raw food dishes. They do this at low temperatures, below the point of actually cooking the foods, to intensify flavors, reduce the amount of moisture in the dish, and sometimes to take the chill off something they'd rather serve a bit warmer than straight out of the refrigerator. There is a practice that we've seen, however, that is actually cooking the very foods were taking such great measures to consume raw! Let me share an experience I had when I first started eating raw foods, that will help explain how some of us may be cooking our foods by mistake.
In the beginning of eating raw foods, my entire family loved the Vegetable Stir-Dont-Fry I used to make (you can find that recipe in the free eBook you downloaded when you first visited our site). One day I created a double recipe so we could eat more the next day, without going through the process of preparing it again fresh. The following day I took the bowl of Stir-Dont-Fry out of the refrigerator and put it into the dehydrator to take the chill off. It wasn't warming up fast enough on such a low temperature, so I thought I'd just cover the dish a little bit to trap in some of the heat that seemed to leave each time I checked the dish and stirred it around. So, I took a plate and placed it on top of the bowl with about an inch, or two, opening.
I know this is our Fun-Filled Friday post, but I have to admit that most of today isn't going to be all that much fun. But, this weekend should be very enjoyable! We have some very special guests arriving tomorrow for a SUPER SPECIAL evening tomorrow night! Leela Mata, a beautiful spiritual teacher, has offered to visit my home and hold Satsang here. One of her extremely talented students, Devaki, will be joining her (and bringing a harmonium to play at Satsang!).
