Okay, so here's a recipe that may make you raise an eyebrow. "Baked " "Rice " Well, it's not really baked and there isn't really rice in it, but it tastes like a baked rice and veggies dish! I created this one day by mistake and we all loved it.

2 cups pureed sunflower seeds

Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. Jim here... During one of our marathon sessions at a Border's book store, I recall reading somewhere about the notion of a fruit's "intention" to be eaten. It's been a few years since I've read that, but I immediately resonated with the notion that many fruits, nuts, vegetables, and seeds are actually evolved to be eaten by other living beings and, therefore, to consume them (or their fruits and seeds) is to participate in a wonderfully nonviolent act that is in perfect harmony with a kind of primordial Earthen symbiosis. Whether these plants, vines, trees, etc. feel a conscious intention to have their fruit eaten by others is a matter of metaphysical conjecture. But, within the context of discussing vegetarianism, the argument is certainly relevant and fairly strong.
If you walk up to a farm animal, it may be impossible to estimate what's going through its mind, but I feel intuitively that it isn't, "Please kill me and eat my flesh." In other words, there's no "intention" present in that scenario. On the other hand, it's very easy to imagine that a tree produces fruit, knowingly or not, in order to produce offspring. Throughout the entire evolution of that tree, part of that reproductive process has involved animals (including humans) eating the fruit and then "redistributing" (which is a nice way of putting it, I suppose) the seeds naturally.
Jim here... Today marks the half-way point of the month of May. Let me tell you, time really does fly when you're as busy as we are here at Pure Jeevan. We're still working hard on selling our home, arranging for the acquisition of an RV for our national tour, reducing our worldly possessions to a minimum, packing up the ones we're going to? keep, writing for Pure Jeevan, keeping in touch with online Pure Jeevan friends and family, and even a new project or two that will, I promise, totally blow you away! In addition, it's beautiful outside once again, and we've been trying to get out more often for exercise, fun, and soaking in some Vitamin D!
As you can imagine, we need high energy to do all of these things, so you may be wondering:? On that low fat raw vegan regimen, how's it going ?
If you've been following us for some time, you'll know that we are continually working on projects that will either serve our raw food community or educate others about the health benefits of a raw food lifestyle. I've always been someone who helps others, who senses in what direction they are headed and then offers inspiration to keep them moving. I love the work we do as Pure Jeevan and it is extremely rewarding to receive so much gratitude from many of you. But, guess what? Sometimes I get tired!
Sure, some of you may be saying, "But, wait! People who eat raw foods are supposed to be power houses of energy -- able to continually keep active and never run out of steam." Well, that is very true. So, I take it back. I'm not really "tired" like I said -- my body is able to wake up in the morning, easily fall asleep in the evening, and go about its daily work without feeling like it's run down.However, I am feeling like I need a rest from all that I've been doing. Maybe I don't need to sleep hours and hours, because my body isn't truly tired. None of my being is truly tired -- my body, mind, spirit, and emotions are feeling great, actually.
However, I still feel like I need a break from my routine. On top of that, I've been feeling uncomfortable in the cold weather even more this year than I did last year. It hurts all the way down, deep inside my bones. I feel like it will take a lifetime to thaw from the cold I've been feeling here in Pittsburgh. The sun rarely shines, and the snow and ice are brutal on someone eating only raw foods. My instincts told me two years ago that it was time to move to a warmer, sunnier climate, but that hasn't happened yet (even though we are patiently working on it, as Jim pointed out in an earlier post).
Continuing with our Taco Week, here's a quick and easy (and delicious) salsa recipe. You can really have a lot of fun with salsa, and can get highly experimental if you like. Almost anything tastes great in salsa. This one is fairly basic, so feel free to spruce it up with some of your favorite ingredients. Our friend Kevin Gianni is turning 30 this weekend.
