Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? WOW!!! WOW!!! WOW!!! Check out the response from 40+ people from around the globe. It's a little overwhelming to see this much positive energy in one place. Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. Above is a quick camera-phone pic I posted to our Facebook group lately. I did talk about making raw parfaits on that page, but want to talk a little more about them today, as it's just the perfect time to be talking about delicious raw parfaits (at least here in America, in any case, where many of the fresh berries you'll probably want are cheap and in season). I'll share a brief story about them, and then share my own basic recipe, and then we'll make some plans for MORE parfait talk really soon, okay?
I'm almost hesitant to talk about raw food parfaits here because, well, if the government found out how unbelievably healthy and ENJOYABLE parfaits are, I'm sure they'd make them illegal. But, I'll take a chance...
Happy Summer Solstice!
Well, it's officially summer here! This time of the year is extra special to us now that we're healthier. Not only is there an abundance of fresh, local organics to eat, but the sun also shows itself to us a lot more (Pittsbugh is ranked as one of the places experiencing the least amount of sunshine per year). The sun actually used to make me feel physically ill (I wrote a bit about that in an earlier post), but ever since I've switched to a raw vegan diet I find myself drawn to the healing sunshine.
Before switching to a raw lifestyle, we used to go on a lot of outings (picnics) and we'd also go camping. I remember a friend voicing concern when my diet was beginning to change to raw foods. She felt I wouldn't be able to go camping anymore and that things like picnics wouldn't be fun for someone eating a raw food diet. She thought I'd need access to a refrigerator in order to keep all my raw foods fresh and a kitchen where I could prepare the delicious foods she had been seeing me eat.

Today's Jim's birthday!
This photo is from Saturday night. We had a sleepover birthday party to celebrate Jim's big day. The Pure Jeevan home was filled with loving friends, amazing raw food dishes, and vibrations from some fun group drumming!

Looks sinful, right It seems to proudly display its bready crust, its gooey chocolate center, some sort of butter-rich top layer coated with lovable little bits and bobs, and a liberal sprinkling of confectioner's sugar to make the whole thing cute as a wintry scene from one of those holiday specials hosted by the claymation likeness of Burl Ives. I'm sure it's delightfully rich, too. A tad small, though, eh ? It's probably all anyone can take of such decadence without worrying about clogged arteries or putting in extra time on the tread mill for the next three days.

This is a long post, even though I tried to keep it brief. It's mostly a personal entry, but I wanted to share things so that you know a bit about what's going on with me and Pure Jeevan, now and in the near future. I'll break it up a bit with some more photos from Raw Spirit, the most therapeutic and life-changing event of my life.

Wendi tells a funny story sometimes about a woman she'd met who was considering undergoing gastric bypass surgery to help her lose weight. When Wendi asked the woman whether she'd consider changing her diet to a raw foods regimen, she responded with something like, "Oh, no, that's too radical."
This is really what it's come to in society; having part of your digestive system surgically altered (in a profound, irreversible, dangerous, and invasive way) is no more than some nonchalant, consequence-free elective decision ... while eating more salads is viewed as "radical."
Jim here... Here's an interesting way to finish out the week: Today just happens to be my one-year "rawniversary." That's right, for the past full year, I've existed as a 100% raw food vegan.
Sure, I'd been "high-raw" for a couple of years prior to September 18, 2008 -- and it was during those high-raw years when the bulk of my weight came off and when I kissed prescription meds goodbye (I'd been on powerful beta-blockers for my heart and blood pressure).
Jim here... As you're probably aware, Sunday marks the summer solstice here in the northern hemisphere. While the Pure Jeevan family certainly includes many raw foodies living in the southern hemisphere (*nods to our friends in Oz and beyond currently heading into winter*), the majority of our readers will equate Sunday with the official kick-off of much longer, much hotter days. So, we'd like to provide some topical, tropical inspiration for you.
How do you feel about heat Personally, I used to *hate* it. I thought I knew what real heat was, too, having grown up in St. Louis where the summers can be brutal. But, Wendi and I traveled to India once (so far!) and, wow, THAT was real heat. I clearly remember standing on an airport tarmac in a place called Trivandrum, just 8 degrees north of the equator, almost in shock over how hot it was there.
Okay, so here's a recipe that may make you raise an eyebrow. "Baked " "Rice " Well, it's not really baked and there isn't really rice in it, but it tastes like a baked rice and veggies dish! I created this one day by mistake and we all loved it.

Jim here with another intriguing installment of Weird Wednesday.Look, I'm a hugefan of gigantic, mondo salads. If you (well, not raw foodists but most SAD-diet Americans) were to visit our house at lunch time, you'd likely think that the individual salads on our table are as big as the salads bowls put out for entire families (for those few families, relatively speaking, that serve any salad at all these days, that is).
Seriously, when I have enough prep time, I like to pile 'em high with organic green leaf (though I'll take red leaf or romaine frequently), tomatoes, carrots, onions, peppers, apple slices, pepitos, sunflower seeds, raisins -- basically everything but the kitchen sink.
