Some of you have noticed that we've seemed a bit silent, or asleep, here at Pure Jeevan. We haven't abandoned our blog or our readers, though! For the next two weeks, it may continue to look like we are sleeping, but in reality we are doing anything but that! :-)

As we'll show over the course of this week, the Raw Spirit Festival is about much more than just delicious, nutritious raw food. In fact, there's usually so many fun things taking place simultaneously while you're there that it's easy to forget about the foods completely!

I'd been there an entire day before realizing that there was a raw food court on site. (Mostly, I'd been dining on fruit I'd brought along and had stored in a cooler in my tent!). Thankfully, I did eventually discover the food court, and it was really something special. To call it a "food court" is almost demeaning, as that phrase brings to mind bland "mall food" restaurants that serve up mostly fast food fare. At the RSF, you're treated with many delicious options, which can make choosing a place to dine rather difficult!

Jim here... Thought we'd share some hidden camera footage from the Pure Jeevan household. Didn't you know ? ... the Pure Jeevan household is under continual video surveillance!? We have an enormous bank of these cameras, all feeding live streams to our costly, off-site high-tek storage facilities, monitoring every room in the house -- all to capture moments of inspiration such as this one. Why carry pen and paper all the time when you can simply install hundreds of "inspiration-cams" and pay techies to maintain a gargantuan bank of petabyte hard drives ? So, in this clip, the actual origin of an idea is captured. (We totally weren't just acting, ok ) So, having scoured said bank of petabyte hard drives, we isolated the following clip --thought you'd enjoy it as a preview of what's ahead tomorrow.

Jim here... Here's part two of a video of Wendi showing how to make raw pasta. (If you did not view part one yet, click here to go there now.) She, with the help of her friend Melissa (of Food Under Foot), prepared a beautiful platter of pastas and some sauces that we all enjoyed when I returned home yesterday for lunch.

We hope this video shows you even more how fun and delicious eating raw foods can be!

As some of you already know, along with regaining my physical health I've also been working on every other aspect of my overall health and being. I don't just want a healthy body---I want the whole package (vibrancy and bliss inside and out, in every way possible).

One area of my mental health that has been slow to heal is my self confidence. I continue to work on it in many ways and have made some tremendous progress over the past year, or so. I feel worthy of so much more than I ever did before.Many people never doubt their self worth---they have a good sense of who they are and assume that others see them as they are, as well.

Today we'd like to introduce you to one of the sweetest, most creative, and passionate raw foodists we know. She's petite, pretty, pleasant, powerful! She continually shares her knowledge about the raw food lifestyle with others and educates many individuals about our human rights when it comes to the foods we grow and consume. She's up on the latest regulatory activities relating to health and diet issues going on within the US government, and speaks out when our rights are in jeopardy of being taken away.

A month has gone by since my last health update. At this point, I consider myself healed of lyme disease! In the past I asked the lyme specialist doctor if there's a way to test to see for certain the lyme is gone, but he said there isn't. So, I go on my inner wisdom, which tells me that it's gone and now I simply need to continue healing from all that the lyme brought with it.

We're still not comfortable sharing what we've been learning and doing to help move my body into an even healthier state, but it's obviously working. I've been able to go back to daily living, for the most part, without much assistance at all. I've organized the house again (Jim and KDcaT were busy caring for me and the house wasn't the top priority for the past half a year), caught up on all of the laundry, responded to all of my email that had been piling up, and I've been able to be more social again. The biggest improvements are that I can now prepare my own food without experiencing any pain, and I can dress myself with only minimal assistance at times! BIG improvements!

Wendi's initial observation about Santa Rosa was that, at first glance, it seemed similar to many of the places they'd visited in Oregon. However, once the sun came out, she said you could feel that California sunshine starting to warm up your body. This is Northern CA, so it's not overly hot; it is, however, much sunnier and a bit warmer than the parts of Oregon they visited.

Wendi and KDcat were hosted by a lovely couple, Shea Lynn Baird and Stephen Barlow (and their adorable dog, Bella, pictured above). You might be familiarwith Shea already, as she and her husband launched the popular Monday Night Live series, broadcast Monday nights from Cafe Gratitude. Shea is a long-term raw foodist, so Wendi interviewed her and asked some questions about what she's been doing. It's a really great, highly interesting interview. Wendi also asked Shea to offer some helpful advice for our Pure Jeevan family members. I think everyone will enjoy the video:

I love this video, in which Wendi interviews our new Portland-based realtor, Bill Futrell. It's a nice interview, but I love the way Wendi's enthusiasm for raw foods rubbed off on Bill almost immediately. There's even a moment in here in which Bill starts talking about Natural Zing. We thought for sure everyone would think we put him up to that, but he did it absolutely spontaneously! So, thanks Bill for helping to support our Snack Sponsor. Anyway, here's what he had to say about Portland, about where we'll fit in, and about his first exposure to raw foods:

One thing I can tell you for sure: Portland is WAY more expensive than Pittsburgh. A year ago, I invested a ton of time reading about low-cost cob houses, straw-bale construction, Earth-ship homes, homes fashioned from "obtanium," thatch roofs, off-the-grid systems, igloos, you name it -- anything DIY-oriented. (Okay, well not igloos; that was a joke. Even though igloos are probably pretty neat-o.) I'm sure we'll get to many of those types of projects one day still. But for now, as you can see, we're going to put down roots in a really great city out West. We're doing it with intention, though, and in harmony with our mission to help ourselves and others obtain the highest levels of health and happiness.

For today's installment of Makin' It Monday, we wanted to share something that we've been making a lot of lately. It's so simple, yet so delicious and refreshing. Here's the recipe:

  • 3 large stalks of celery
  • 1 handful of cilantro
