This is Part II of a two-parter on raw food restaurants. Yesterday, we listed a half-dozen challenges that one might face when opening a raw restaurant. Today, we're focusing in on the more enjoyable side -- the potential advantages that opening raw restaurants offer over their cooked-food counterparts.

Jim thought it was important for me to update everyone about my health, especially since so many of you have been sending emails, etc., and I haven't responded.
I do appreciate all the love and concern (thank you all so VERY much!), but it's painful for me to type for very long. This update is going to most likely bring about some more pain, but I don't want you to keep worrying about me and my health. So, I'll share what's been going on.
There's an antibiotic that will decrease the pain temporarily if you have Lyme disease (it won't help the pain if it's caused by anything else), and I was able to obtain some of it. So far, today is day five on it. And here's some great news: The pain started lessening on day three -- the aches completely gone, leaving only sharp pains when I move my joints in certain ways. I'll be on this antibiotic (and possibly some others for "co-infections" that sometimes come with Lyme, but I won't know until more blood tests are done and the Lyme specialist reviews the results).
Jim here... Here's a compilation of vids from my little Flip camera, all taken over our weekend roadtrip to Washington, D.C. It's not all strictly raw-food related, but does include some raw tips. First up, you'll see our rawsomely packed food coolers. Between using ice and frozen fruits, everything kept cool just fine.
Early in the video, Wendi shares a handy tip for keeping your smoothies cool on the road. If you're going to drink your smoothies right away, you might have little concern for keeping a drink cold. However, we had eaten breakfast already and knew we wouldn't want to get into our smoothies for another hour or so after leaving. Frozen berries to the rescue! (Just make sure to hunt down a large glass bottle with an opening large enough to pour frozen berries into.)
Here's a picture I took at Portland's Saturday Market last week. We've been pleasantly surprised to find that artichokes grow rather well here in the Pacific Northwest. We don't recall seeing them much back East, but many of our neighbors grow them (both for the artichokes and, I suspect, as ornamental plants).
I suspect that some raw foodists tend to overlook artichokes because they're so traditionally linked with the image of something steamed, stuffed with breadcrumbs, and drizzled in butter -- so, "cooked," "breaded," and "dairy" all together in one recipe! Being half Italian, I grew up eating them this way. My mother almost never said "artichoke"; she always called them an Italian word that sounded like "ga-GO-che-lee." ?She made them just a few times per year, and they were always a huge treat (and we'd often fight over the hearts -- by far the best part!).
Today, for Thankful Thursday, I want to focus on a raw food related subject: Raw Recipe Books! Without the many mouthwatering, visually appetizing recipes that have been created and published, I don't know if I'd still be living a raw food lifestyle at this time.
About two years ago, when I made the decision to transition into a raw food diet, there were some fantastic raw food recipe books available. A few years before that, when I tried raw for the first time with a dear friend of mine, there were books available but none of them were truly gourmet meals. It's amazing how much things change in just a few years! The newer books are filled with colorful pictures of the most visually stimulating foods, which never looked like simple chopped up veggies arranged nicely on a plate. We have a page with many raw recipe books listed, if you'd like to see some of the ones that are available.
It's Fun-Filled Friday again---that week went by so quickly! So, what fun did you have this past week and what fun have you planned for yourself in the near future? It's very important to make the time for fun. We all know that, right? But, how many of us actually carve out the time to have some special fun without stress, without problems---a time when we can laugh and experience the joys of being alive?
When you get into raw foods, one thing you're probably going to notice from time to time is that others are "concerned" about your health. This is hugely ironic -- not only because it's likely your own concern about your own health that brought you to raw in the first place, but because you most likely hold the conviction that the raw food diet (or some close variant of it) represents the most healthy dietary regimen available for humans.
Nevertheless, you'll receive a lot of concern. You'll receive it even when you have that "raw glow" and are looking and feeling better than you have in years! The main concerns:
