Look at the dinner we had this evening!!!

A bean and rice burrito, taco with all the toppings, tomato and pepper salad, and sweet orange salsa! Yum, yum, yum!!! I'll be posting the pic again and sharing a recipe on Monday.

Dinner this evening tasted almost like I was eating cooked food. We don't normally make a lot of gourmet-type meals anymore, and certainly not more than just one thing at a time. So, having a plate of different complex foods was a real treat! It takes a lot of time (and expense) to eat like this, but it's nice to treat ourselves sometimes, isn't it?

I've been working with the recipes I'll be using for the upcoming retreat, and taking a lot of notes so that things go smoothly at the end of May. So, at home we'll be eating even more gourmet foods over the next week. I'm looking forward to the pancakes, since we haven't had them in a long time!

That looks delicious! I hear you on the simple foods. I don't make gourmet food that often - especially right now, what with the juicefeast! - but I think it's a great treat once a week. I live off fruit, green smoothies and kale salad most of the time but I make an effort to make one new recipe per week. I see that taco in my future!

Wish I could get on my broomstick and fly over the ocean to join your retreat. Sounds divine.
