KDcat and I returned from the ashram last night filled with peace and motivation to move forward with our current goals (more about this in the upcoming newsletter). However, we also returned to a home with next to no produce in it (well, compared to what we normally have available). What to do? There's no way to run to the co op today (only one car in our home) or this evening, so it's time to be creative. Let's take a look at what Pure Jeevan has in the fridge and on the counter, and we'll see what we can create!
* Huge bunch of broccoli
* One bag of Romaine Hearts
* One yellow pepper
* Possibly some celery (can't remember)
* One large tomato
* Onion and garlic
* Small amount of snow peas (but they might be too old--have to check)
* Various nuts and seeds
So, what do I see in that list? Hmmm....the first thing to pop out at me is a juice of carrot, beet, and apple. Maybe for lunch we can have a simple salad and a juice. For dinner, I see a veggie stir-not-fry in that list! When I make the stir-not-fry, I like to put it in the dehydrator for a short time (it allows the veggies to marinade and soften, as well as warm up a tiny bit).
