This has been floating around the web for a day or two, but for those who haven't seen it, here's former President Bill Clinton talking about his plant-based diet, and what he hopes to gain through it. How amazing to see an *American president* discussing this sort of thing!! Who'd have ever imagined this (considering the strength of the beef and dairy lobbies in this country)?
Stories like this give me hope that the world will become more health conscious -- and will begin to understand that things like irradiation, GMO technology, pesticides, and all of the scary discussion floating around about the "Codex" are all unnatural, unsustainable, and unhealthy for us and for the planet. All you need is love -- and delicious organic foods! Glad to see Bill Clinton advocating this.

Jim here with another installment of Weird Wednesday...
Throughout the year, I go through various phases of fruit preferences. Right now, it's citrus. I eat probably four large grapefruits per day (dark reds). The darker the red the better, IMHO. I can get quite disappointed when the grapefruits are listed as "ruby red" but turn out to be just regular pink ones. I've noticed that the ones I like the most have an orangish tint to them, as though they've been left to ripen on the bush a little too long. Also, the best ones I've had this year have been from Texas. So, find yourself some burnt-looking Texan grapefruits & enjoy the blood-red bitter-sweetness!

As promised, here is the picture again of the Mexican meal I created the other day. It will be served at the upcoming 3-Day Raw Food Spiritual Ashram Retreat (only a few spaces left!). Since many of our readers can't make it to the retreat, I said I'd post some of the recipes here in the blog. I hope some of you will try to create the recipes and let me know what you think!

Yesterday I decided to go ahead and consume what my body was telling me it wanted: cooked, fermented rice and lentil pancakes. Well, the restaurant nearby that makes the Uthappam doesn't serve them until 5pm and it was lunch time. So, I ordered the simpler, steamed, fermented rice and lentil patties called Idli.

Today I answer the second part of a letter Jim received from a Pure Jeevan member who was seeking advice about her daughter who has decided to become a vegetarian. Rather than quote parts of her letter, I'll summarize the questions (because they are general questions that we hear a lot and our answers are given for everyone, not just the individual who sent the most recent letter).

Here's an impromptu interview with Matt Miller, the gourmet raw foods chef from Maggie's Mercantile, a vegan/raw restaurant in Pittsburgh, PA. We met Matt @ a recent Raw Foods Meetup here in Pittsburgh. In the video, we discuss Matt's famously addictive raw blue corn chips -- deemed by yours truly as the "holy grail" of raw foods. Even though it's not time to share everything with you about the life-changing events going on with us here at Pure Jeevan, I'm going to try harder to squeeze in a few minutes once in a while to update this blog with other information. I miss coming here and connecting with all of you. Thank you for so many lovely emails that you've been sending to me. I will be responding to all of you very soon. Please forgive me for taking so long to respond, but once we fill you in on everything that's been going on, I think you'll understand that it's difficult to find time to keep up with email and blog writing, among other things.
The latest news, as far as raw foods go, is that I'm having a love affair with a particular fruit. When I was transitioning to raw foods over two years ago, and also during the first few months of eating 100% raw foods, I was in love with young Thai coconuts. I couldn't get enough of them and they did some amazing things for my body---the most amazing was lowering my cholesterol to a healthy range within one month! After many months of consuming at least one coconut per day, however, my love affair ended. I still loved those Thai coconuts, but they just weren't as attractive to me anymore.

Since we posted Wendi's two-part series on pasta-making techniques (part 1, part 2) last week, I thought I'd follow up with an additional novel use for the spiralizer -- super-delicious, blazingly fast, ultra-low-fat sweet potato chips! We've done some really great things with sweet potatoes before. (Anyone signed up as a member of the Pure Jeevan family has likely already received our prized sweet potato pancake recipe.) But, these chips are amazing because they satisfy that unmistakable urge for crunchy, healthy snacks -- and in record time. Friends, if you have a dehydrator and sweet potato on hand, you could literally be enjoying these things in under three hours. So let's get going!
As Wendi demonstrated in the videos last week, you can easily make "rounds" using the spiralizer by simply making a vertical slice throughout your vegetable prior to placing it on the spiralizer. So, if we were looking down at the sweet potato, the cut (which goes all the way down the length of the vegetable) would look like this:

We don't normally post on weekends, but we're sharing this video as a special gift for my mom on Mother's Day.As Wendi likes to say, "Every day is mother's day!"?
