As promised, here is the picture again of the Mexican meal I created the other day. It will be served at the upcoming 3-Day Raw Food Spiritual Ashram Retreat (only a few spaces left!). Since many of our readers can't make it to the retreat, I said I'd post some of the recipes here in the blog. I hope some of you will try to create the recipes and let me know what you think!
As many of you know, Kevin and Annmarie Gianni (of Renegade Health) have now started their RV tour, for which they selected Pittsburgh as their official kick-off location. While here, we at Pure Jeevan took a special ride in "The Kale Whale," their veggie-oil-powered RV. Inside, we enjoyed a comfortable ride (which included hanging out with Johnny 5 -- their cat -- and drinking some hot tea prepared right there in the Kale Whale). Outside, we endured the freezing cold temperatures of Pittsburgh while pumping filtered used veggie oil into special holding tanks in the RV. Here is some video footage from our Kale Whale encounter!
Jim here... Here's an interesting way to finish out the week: Today just happens to be my one-year "rawniversary." That's right, for the past full year, I've existed as a 100% raw food vegan.
Sure, I'd been "high-raw" for a couple of years prior to September 18, 2008 -- and it was during those high-raw years when the bulk of my weight came off and when I kissed prescription meds goodbye (I'd been on powerful beta-blockers for my heart and blood pressure).
I hear the question all the time: "Don't you miss eating out at restaurants " My answer is always, "No. I prefer the fresher organic foods I can create for myself in my own home. I can pay the same amount for better food if I stay at home to eat." It's true, too. I don't miss eating out at restaurants. Sometimes I miss the convenience of someone else doing my food prep and cleaning up afterward, but as far as the actual food that I consume, I prefer the foods we eat at home. Besides, when you eat out as a raw foodist, your choices are limited to only a salad if you live in an area with no raw food restaurants.
Sometime last year, as a treat for Jim, we went to a restaurant. I got a huge salad that I used to love when I ate cooked foods at that particular restaurant. I remembered the greens were always dark, the onions were nice and flavorful, and the dressing was a simple oil and vinegar with salt. Well, after consuming only fresh foods in our home for quite some time, the salad that I used to think tasted so great now seemed to be lifeless and limp. It wasn't enjoyable to eat, and I sure didn't like paying so much for a nonorganic salad that didn't even taste good to me. So, we didn't eat out again after that.
Wow, with literally years of raw food coverage under our belts here at Pure Jeevan, we don't think we've ever devoted an entire post to fermented foods. Well it's high time we do, don't you think ? Check out the video and then we'll discuss it further...
This retreat has been planned for quite some time, and we are very excited about it! It's going to be three days of feeding your body, mind, and spirit. We've kept the cost as low as possible, so that more people can afford to take the time to get away for some quiet time.
All the food is organic and raw, prepared for you with lots of love! There are yoga sessions, meditation, and even a beautiful bonfire if the weather is nice. I've taken some personal retreats at this ashram, myself, and it is so peaceful (it is called the Peaceful Valley Ashram, after all). ;-)? We've created a schedule of suggested activities, but everything is optional. This is a great opportunity to simply get away and calm your mind.

This video is nearly 10 minutes long (sorry, we'll aim for shorter ones in the future), but shows a full process for making a delicious, spicy nut dip. From there, we show two options for making the sandwich -- one using dehydrated raw bread, another using lettuce as the wrapper. I wanted to add that the packaged raw bread used herein is from Love Force, a great company that has provided sponsorship support to Pure Jeevan in the past. I was just thinking about a particular phenomenon, but don't know what to call it. This is something I used to notice mostly after watching movies, although it's something that happens all the time in life -- and I think it does in fact relate to diet, so I'll share. Here it is:

Back when we ate cooked foods (especially way back when our menu was not exclusively vegan), parmesan cheese seemed to be a staple of our existence (especially for Jim). We'd sprinkle it liberally on pasta dishes, salads, soups, and more.
As is typical for many raw foodies, you often realize after going raw that it was not always necessarily the food itself that you craved (no matter what it was); often it was simply the texture, the spices, the various flavors and tastes, etc. And that realization leads raw chefs to wonder whether the same experience can be recreated using only raw ingredients.

Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. Jim here...Well, something awful happened today at Pure Jeevan, something utterly shocking to any raw foodie on the planet -- our Vitamix container broke! I know, I know... breathe with me: Deep breath in... deep breath out. There, that's better. It's going to be okay, I just know it!
Here's what happened:? The agitator assembly (the metal part at the bottom that connects to the blades inside the container) wore out. It blew some kind of bearing or something, lost its internal oil, and started making an infernal noise when we blended our morning smoothie. It was pretty clear we'd blended up our last elixir in that container.
