Jim here... Over the weekend, I'd made a string of videos for Pure Jeevan using my handy-dandy new phone. To my great surprise, when I went to post them to YouTube, they all came out sideways! So, I'm sorry, friends... you'll have to endure (if you so choose) a somewhat disorienting video, below. But, hey, at least it reminded me of that wondrous quote from the movie Sideways! I imagine Paul Giamatti describing one of my own recent creations this way -- a sort-of half-raw, yet still very healthy delight that I like to make sometimes.

My reason for featuring a less than 100% raw recipe is two-fold. First, I'd been discussing transitioning to raw (see yesterday's post). And, adding more raw into your non-raw diet is a great way to transition. I believe that raw sauces are an excellent way to achieve this, as I'll explain in the video. Second, if you do prefer a 100% raw dish, then you can simply replace the beans with something else -- perhaps sprouted beans, or maybe your own invention from the dehydrator.

When I first decided to try a raw food diet again (I had sampled it for about three months a few years before going completely raw), I wanted to do it in a way to prove that it either does or doesn t work. The best way to do that, I figured, was through consistent blood tests. So, that s what I did. I have continued to document my path to health with regular blood tests. Many of you know that the results have been remarkable. My dramatic shift in weight is the most obvious to others, but there were equally impressive changes going on inside my body, as well.

It has been about a year since my last blood work was done, so I knew I should schedule an appointment to get the testing done soon (since I want to keep the tests somewhat yearly). I tend to always put the testing off, however. As much as I m curious about the results, the truth is that I m terrified of needles. Over the past few months, I was continuing to put this yearly testing off, but something has spurred me to get it done sooner than later.

Here it is, the final stop along our 40-day cross-country tour, Chicago, IL, before returning home to Jim! It's been an incredible time, meeting so many wonderful people, seeing so much natural beauty across the country, deciding where we'll relocate once our home sells, tasting incredible raw foods along the way, and spreading the word about the raw food lifestyle whenever an opportunity presented itself!

Below you'll find the final notes I wrote about our tour, along with some videos and pictures of our final stop in Chicago, Illinois.

We definitely arrived in Chicago refreshed and ready for some adventures. So, we headed directly downtown to search out a new raw food restaurant that our friends Kathy and Danny Living had mentioned to us.

RAW, the newly opened restaurant by Polly Gaza and Carole Jones, is situated inside the Ogilvie Train Station in a recently constructed French Market food court. When we figured out how to get into the market, we were impressed. It's a nice concept and has a fun feeling to it, just strolling along a market place (all while inside a large building housing a train station) that seemed as though it was almost outdoors. When we found the new RAW restaurant, we were thrilled. The colors, decorations, and displays were all very well done. We had to wait a while to talk with the owners, since the restaurant was doing some great business when we arrived. The video was edited down because the sound quality wasn't very good, but you'll hear some inspiring thoughts from Carole about manifesting your dreams and how she and Polly simply manifested the restaurant by beginning with their thoughts. After leaving the restaurant, we headed straight to Borrowed Earth Cafe to visit with our friends Kathy and Danny Living. For those of you who don't already know them, Kathy and Danny are incredibly loving people who are down to earth and doing some incredible things with their lives (manifesting along the same lines that Carole touches on in the video, above, and also inspiring others along the way to live their dreams and treat the planet with kindness). We first met Danny and Kathy last year during a visit to Chicago, and we immediately loved them. If we hadn't met them last year, our route back home during this tour wouldn't have included a stop in Chicago. However, we did meet them and I wanted to spend more time with them so a stop in Chicago was added to our trip itinerary. I love their energy, their soft and gentle loving nature, and to top it off the raw foods they serve in their Borrwed Earth Cafe are delicious. So, KDcat and I were looking forward to spending time with them again (and Jim was sad to miss out on seeing them this time).

When I told Danny and Kathy that we were coming in for a visit during our tour, they asked if we'd be interested in talking to their raw food meetup group. We agreed, of course, and they introduced us to David Hanley, a member of their large group. David hosted us for our stay in Chicago and we had a nice time getting to know him. He's into stairclimb racing, yoga, software development, loves fixing homes (like Jim does), raw foods, and so much more. In his home, David has a massage chair that KDcat really enjoyed a lot. David drove us to our talk at the meetup, where we met with even more incredible people. It was a large group, so we met at a Whole Foods meeting room not very far from the cafe. There were a lot of questions from those attending the talk, which I always enjoy. It's nice to meet so many people who are interested in learning a about ways they can improve their health.

That evening, we shared with David the generous amounts of raw foods that Kathy and Danny had sent home with us for the evening. We enjoyed things like Borrowed Earth's World Famous Salad, Burrito Loco, Sweet Potato Quesadilla, a green smoothie, some cheese cake, and the most incredible raw apple pie I've ever tasted. I'm not kidding about that statement, either. I used to consider myself queen of the apple pie back when I baked my foods, and this raw apple pie that Kathy and Danny have created was even more delicious than my best baked apple pie. If you don't believe me, it's worth a trip to Chicago just to check it out! Absolutely DELICIOUS! Maybe if enough people ask, Kathy and Danny will share the recipe with all of you through one of our special guest chef editions of Makin' It Monday!

Before leaving Chicago and heading toward home, we stopped by Borrowed Earth Cafe once more to spend a little extra time with Kathy and Danny. We had great fun together and as much as KDcat and I were looking forward to being with Jim again, we wished we had more time to spend with Kathy and Danny. While there, we talked a lot about the power of intention and creating our futures. Danny also brought out some tuning forks and balanced my energy using them. Let me tell you, that was some powerful healing he was doing. After he was done, I felt euphoric and grounded all at the same time. I was filled with even more love than I normally feel flowing within and without my body. Wow! When I told Jim about it, we agreed that we'd like to learn more about tuning forks, too.

Danny and Kathy are always a wealth of knowledge and inspiration and I was sad to leave their company. Before going, they sent us out the door with even more delicious raw foods to feed us until we returned home. There was even some leftover to share with Jim when we arrived home the following evening!

So, that ends our tour! After Chicago we headed back to Pittsburgh to be reunited with Jim. The next time we cross the country, we'll be doing it together as a family. Being apart like we did it this time (which was necessary for budgetary reasons) took away from some of the fun we could have all experienced together.

Jim here... It's been nearly half a year since we posted a long meditation on living patiently, noting the unique, sometimes-at-odds dovetail that exists between (1) experiencing the zen of patience and (2) living the electrically charged life of raw foods. While we're STILL living with the same patience we talked about, I have to admit there have been times when we've been in not-so pleasant touch with some real frustration about getting our home sold and finally moving on to all of the exciting stuff we have planned for us and for you.

Wendi and I are absolutely ecstatic about taking our raw foods message to the next level -- and not just "next level" meaning more a few more blog posts and videos, but a true quantum leap in terms of our immersion into this world and commitment to advocating the lifestyle. It just gets a little tough, even when practicing patience, to be kind of stuck in the starting gate.

When we were heading out of town, I said that this trip might be a bit difficult on Jim because it's his first time being exposed to our friend Mamta's Indian food while he's 100% raw. I created some rich, delicious dishes to keep him satisfied, so that the temptation wouldn't overpower him. I expected no problems for myself, since I've been raw for more than three years and have been exposed to this temptation before without any problems.

Well, guess what? The cravings are here! You see, Mamta is THE BEST Indian food chef EVER. We've eaten literally thousands of Indian meals over the years, and even enjoyed it while touring India for nearly a month in the 1990s, but nothing has ever compared to Mamta's skill at creating the most delicious food on the planet. As usual, she sent home lots of food when we left this weekend -- this time all for KDcat, who is so very happy she's not eating 100% raw foods. I don't even know how many different dishes came home with us, but their aroma has been extremely tempting.

This morning as I was driving from the beautiful Carnegie Mellon University campus to a business meeting outside the city, I had to take a detour at one of Pittsburgh's many bridges. It was a little frustrating because I had hoped to arrive at my destination early enough to grab a green tea at a coffee shop. But, these little delays happen. I'm glad this one did, though, because I soon passed a small yoga studio (called Pratique) where an interesting window decal hangs. It reads: "Yoga is my health insurance."

Many kudos to the clever people at Pratique who apparently crafted this catchy and spot-on message. While this is a raw foods site, not a yoga site, the message is equally apropos here. It essentially means, in my view, that we all have the opportunity to profoundly affect our own health and well being.

In our family, we're currently facing the realistic prospect of taking a literal approach to this concept, dropping formal health coverage! Quite literally, we feel that maintaining a health plan is (almost) a complete waste of money. I'm not posting this to start a debate as to whether those who follow a healthy diet should or should not buy into a plan. (I know all of the related arguments already: Yeah, but what if you cut your arm and need stitches Save that for Facebook or, at least, some other time.) I'm more concerned with reiterating one of our key messages here at Pure Jeevan -- our unwavering ?conviction that physical health and diet are tightly connected. Wendi knows this, I know this, our child knows this, YOU know this... But why doesn't everyone acknowledge it?

As we promised yesterday, we're featuring a wonderful (and LONG!) video interview today with the incredible John Kohler of Santa Rosa, CA. You may be familiar with John from some of his popular web sites, most notably his "Living and Raw Foods" community site at www.RawFoods.com. Below are parts one, two, and three of Wendi's interview. They're roughly 10 minutes each. (That's a lot of time, I realize, but at least check out Part 1 if you're short on time, as it offers an amazing look at John's front yard.)

Wendi said she was at a loss for words when interviewing John at his home (and you'll soon see why!), because what he has done on his 1/10th of an acre lot is *phenomenal*. He told Wendi off the video that it's all a matter of trial and error--finding what grows easily and well, and working with those plants the most. If something takes a lot of effort, or is difficult to easily grown, he skips it and focuses on what can give the most yield for the least work. Almost everything grown on John's land is edible!

John has a lot going on, including a monthly potluck. Wendi and KDcat happened to be in town on the night of the March potluck, so Wendi was invited to speak at the event. It was a nice, laid-back group of people, Wendi said, and they sat at a long table talking about the raw lifestyle, health issues / concerns, what children are fed in school, and so much more -- a really nice group of people, Wendi said, noting she'd love to visit them all again. Those consuming a raw food diet sometimes use a dehydrator to prepare raw food dishes. They do this at low temperatures, below the point of actually cooking the foods, to intensify flavors, reduce the amount of moisture in the dish, and sometimes to take the chill off something they'd rather serve a bit warmer than straight out of the refrigerator. There is a practice that we've seen, however, that is actually cooking the very foods were taking such great measures to consume raw! Let me share an experience I had when I first started eating raw foods, that will help explain how some of us may be cooking our foods by mistake.

In the beginning of eating raw foods, my entire family loved the Vegetable Stir-Dont-Fry I used to make (you can find that recipe in the free eBook you downloaded when you first visited our site). One day I created a double recipe so we could eat more the next day, without going through the process of preparing it again fresh. The following day I took the bowl of Stir-Dont-Fry out of the refrigerator and put it into the dehydrator to take the chill off. It wasn't warming up fast enough on such a low temperature, so I thought I'd just cover the dish a little bit to trap in some of the heat that seemed to leave each time I checked the dish and stirred it around. So, I took a plate and placed it on top of the bowl with about an inch, or two, opening.

I wrote on Monday that today (Thursday), we would be discussing mint here -- specifically, harvesting some late-remaining mint from our mint bed (shown above in all its glory) and making something with it. I failed, however, to take into account that it's been getting darker earlier and earlier these days. By the time I was able to get outside and talk about mint, it was just too dark.

So, I thought I'd forego the video, and just write up some minty facts to freshen up your Thursday. To begin, I would highly encourage anyone who is new to gardening, and wants some early success, to experiment with mint (including spearmint, peppermint, and the various varietals available here and there). I can almost guarantee that you'll have some wild (and I do mean wild!) success, and will soon enjoy more mint than the law allows. It's so easily grown, and spreads around so easily (via its root system), that it would almost be considered invasive if it weren't so darned desirable and fragrant. (It's tough to walk past a mint bed without snatching up a leaf, rolling it between your fingers, and inhaling the scent deeply.)

I'm excited about something that one of my friends has been working on. Melissa is gifted in so many areas, one of which is wild edible identification. She recently told me she was working on something that would help a lot of people and I was excited about her new project. Well, now it's ready to be shared with everyone!

Take the time to meet...

Today's post isn't specifically about raw foods. But, we wanted to post a few videos highlighting some interesting research by an Italian doctor named Tullio Simoncini, who just might be onto something HUGE! Dr. Simoncini treats certain cancer patients with ordinary sodium bicarbonate (baking soda), based on his premise that cancer is a fungal problem and that a solution of baking soda is anti-fungal. Naturally, he's been vilified by the medical establishment for making such a seemingly simplistic claim. But, what if he's right?

Here at Pure Jeevan, we're very much into health research -- not so much with an aim to cure any specific disease or ailment, but rather to understand ways in which our bodies can become what we like to call unbalanced, as well as the ways in which we might return our bodies to proper balance, when necessary. In this way, I suppose that we, like many in the natural health world, feel that the body is amazingly capable of healing itself (in many circumstances) as long as the body is able to find a favorable state from which it can properly do what it naturally wants to -- which is to return the body to an optimal state of health.

Medical doctors don't buy into this theory very much. ?However, it's certainly ironic how, where certain areas of standard medical practice are concerned, what I described above is exactly what doctors do. Take something like a broken bone, for example. A doctor does not normally attempt to surgically repair the bone itself. Rather, the standard and time-honored practice is to set the bone (say, with a cast), and then to let your body heal the break naturally, on its own, making those skeletal connections as only the imponderably complex, ever-evolving wisdom of the human body can facilitate. (True, doctors do often intervene these days with surgery for broken bones. But, their aim there is mainly to position the bones for proper healing, and/or to do things like insert pins in an attempt to improve functionality after healing. Either way, the procedure here still relies on the body's ability to eventually heal the problem.) Standard medical knowledge in this area is without question outstanding -- and this is why most people in the natural health world have little problem with going to see a medical doctor for emergency treatment.
