Here's an impromptu interview with Matt Miller, the gourmet raw foods chef from Maggie's Mercantile, a vegan/raw restaurant in Pittsburgh, PA. We met Matt @ a recent Raw Foods Meetup here in Pittsburgh. In the video, we discuss Matt's famously addictive raw blue corn chips -- deemed by yours truly as the "holy grail" of raw foods. Below, I'll go over the ingredients, etc.

This video is nearly 10 minutes long (sorry, we'll aim for shorter ones in the future), but shows a full process for making a delicious, spicy nut dip. From there, we show two options for making the sandwich -- one using dehydrated raw bread, another using lettuce as the wrapper. Back in the early 1990s when we moved to the Washington, D.C., area, Wendi got a job in Arlington, Virginia. When she walked into work one day, one of the other workers there was absolutely glowing. So, she asked the woman, "Do you have a new boyfriend or something ?!!"

Welcome to Episode 4 of Know Your Food. Wow, the PEAR episode is here at last! Aren't you thrilled to know that? Of ALL of the fruits, veggies, nuts, seeds, herbs, etc. in the knon world, we finally got to the wonderful pear. Well, it's no surprise, when you think about it. After all, sweet, mild pears are usually among the first fruits fed to babies. So, chances are, you were fed them, too, as a toddler. So, let's dig in, shall we?

Pears contain water-soluable fiber (pectin), Vitamin A, Vitamin B1, Vitamin B2, Vitamin C, Vitamin E, Copper, Potassium, Posphorous, Folic Acid, Niacin, Iron, Magnesium, Sodium, Sulphur, Calcium, and more! They lower your blood pressure, releive inflammation, lower cholesterol via pectin, calm the stomach, cool the body, prevent cancer via anti-oxidants, boost your energy via the fructose/glucose, reduce inflammation, help your bones/calcium levels, aid in pregnancies via the folate, and much more. Pears are GREAT for you, so eat them regularly!

Jim here... Yesterday, Wendi toughed it out and typed up a lengthy health update (a painful process for her -- trust me!). So, for the rest of this week, I'm going to fill in here (letting her get back to her resting and healing) and share a few interesting stories related to this Lyme adventure. But first, I wanted to add that today brought some great improvements in Wendi's condition. She was able to do a physical movement (wrapping a towel around her head) without pain for the first time in months. So, we really think those antibiotics are starting to kick in.

Today's topic is intuitive eating. I'm certain we've covered this many times on the blog here. So, rather than explain what it is again, I'll just share an intresting example. Basically, while dealing with these Lyme symptoms, Wendi experienced a serious craving for olives.

Before we moved to Portland, Oregon, land of all things fresh and organic within walking distance, we had to drive quite a distance to reach the food co-op (the only place that had a good selection of organic produce and other raw food necessities). So, we only went shopping about once a week. It took a lot of trial and error to find ways to keep our weekly produce fresh for about a week.

We learned which fruits and vegetables stay fresh the longest, and which go bad the fastest. Based on this, we stocked the refrigerator accordingly (and used up the produce accordingly, as well). The fruits and veggies that stayed fresh the longest were stored in the backs of the shelves (things like carrots, beets, broccoli, cauliflower, apples, etc.). Next we stored the greens that lasted a pretty good amount of time (like kale and collards). And in the front of the shelves and in the door, we stored the more delicate greens (like lettuces and herbs).

We have two events scheduled for this weekend and we are looking forward to both of them! The first is a Raw Food Potluck Meetup. I haven't decided what I'm creating, yet. So far I'm thinking I'll make either an apple pie or some beet noodles with alfredo sauce, but I know how things usually go when it's time for me to prepare something special. I usually feel like I don't want to make what I had planned, and I search around in the fridge to see what pops out at me. I almost always go by what I'm inspired to create at that moment. So, who knows what I'll end up making. I'll try to take pictures of my creation as well as pictures of the other raw food dishes that others bring.

This will be our first raw food potluck. When I first went raw it was something I was doing special for myself, by myself, so I didn't join any of the raw food meetups and didn't want to make it a group activity with my friends.After two years of raw (a little over one at 100%), I've done (and continue to do) what I needed for myself.Now, I'm ready to share my experiences with everyone and to be an active member of the raw food community.So, I'm looking forward to the raw food potluck tomorrow!? Wow, what a strange episode we have for you tonight! As you'll see, it was a really bizarre day here at Pure Jeevan. Wendi's out of town with her friends Rawbin and Jeff (owner of NaturalZing) helping NaturalZing with their booth at the Green Festival in Washington, DC. Too bad she's away; she missed opening the mail today and seeing a highly unusual letter from the Department of Homeland Security! The topic? Well, it turns out Pure Jeevan is under governmental surveillance -- and our chief surveillor, one "Larry Ferguson," actually decided to introduce himself and make some comments about our Bananas episode (which we hadn't even released yet!). Sounds highly unusual, I know. But, he was actually doing us a favor. Take a look (vid shows me reading part of his letter, then the banana episode proper):

As you heard, Larry writes: "I believe your viewers deserve to know, for example, that bananas have roughly 100 calories each, are high in Vitamin C, and fiber. You might also want to mention that they contain considerable levels of B6, which is good for metabolic functions as well as nervous and immune systems. B6 also helps you produce antibodies to fight diseases and plays a strong role in brain function and even maintaining hormonal balance. Your body can't store B6, btw, so you need to get it every day. Of course, most people will know already about the great potassium levels in bananas. Potassium is great for controlling blood pressure and certainly reduces risks of heart problems. Bananas also contain manganese, which your viewers probably already know about after your persimmons video."

Did you know that approximately 70% of your muscle, 80% of your blood is water, and 85% of your brain is made up of water? When we are born, we are nearly 90% water by weight, and as we age we lose more and more water (think of a grape slowly shriveling up into a dried raisin).

If you consume 100% fresh raw foods (with none that have been dried or dehydrated in any way), your body is receiving the cleanest, most pure water possible and you probably don't experience a lot of thirst. The less fresh foods an individual consumes, the more their needs for water increases.

Sad Update: Our friend Michelle Pierson, interviewed here, passed away in July 2016 after a kayak accident in Hawaii.


We've spent the past three days focusing on the core subject of critical importance in the raw food lifestyle -- the FOOD! However, as most people will agree, it's also about so more than "just the food." Here at Pure Jeevan, we've always made a point to stress the holistic nature of our philosophy (mind, body, spirit, emotions), and we'll certainly continue to do that.

The Raw Spirit Festivals also do a magnificent job of illustrating this point. While they do offer *spectacular* raw foods and presentations centered around raw foods, you'll also find music, dancing, yoga, and other uplifting recreational activities all day long!
