We're loosley going to be picking up some of the ongoing themes we used to cover here on the blog. For the Take the Time Tuesday theme, we asked our readers to take the time to meet or learn about an individual, product, company, etc., that we think may be of interest to you. For today's entry, I'd like you to:

Take the time to meet...

Yesterday's post was a little "heavy," don't you think In it, we shared a bit of the stress we were experiencing related to our pending move. There was just so much data to pore through (and yes, we're still feeling that stress)!?

At times like these, it's often good to step back, breathe, and make sure you're not ...well, freaking out -- which makes today's "Take the Time Tuesday" installment absolutely fitting, for we would like you to meet a raw foodie who goes to great lengths to ensure that your "Vitamin L12" levels stay well into the superhero range. Without further adieu, then...

Last night I dreamed of meandering through an unfamiliar cityscape, following some lonely sidewalk next to a river at night, feeling particularly sad and miserable beneath dim yellow street lights. I wore a black suit, carried a highball glass, and was absolutely drunk!

Having crossed the river, I soon realized (even in my dream-drunken state) that I'd been wandering aimlessly. Feeling rather pathetic, I decided to walk back across the river and sober up in a casino that I knew was there. Drunk and depressed, I figured I'd just sit in front of a slot machine for a few hours.

Welcome to Day One of "Dressings Week" here on Pure Jeevan. After finding out that KDcat took it upon herself to film a segment of "Makin' It Monday, Guest Raw Chef Edition," I decided that we should probably spend an entire *week* focusing on salad dressings.

This video is nearly 10 minutes long (sorry, we'll aim for shorter ones in the future), but shows a full process for making a delicious, spicy nut dip. From there, we show two options for making the sandwich -- one using dehydrated raw bread, another using lettuce as the wrapper. I wanted to add that the packaged raw bread used herein is from Love Force, a great company that has provided sponsorship support to Pure Jeevan in the past. Our weekend is going to be filled with Spring cleaning. Many may not think of any type of cleaning as fun, but there's something special about Spring cleaning. Maybe it's because when we do Spring cleaning in our home, we tend to make it a family event. When we do things together as a family, even though there may be a little bickering here and there, but for the most part we have fun. There's something truly rewarding about working together as a team for something that is going to benefit everyone.

The mono meals ended and I did create that beet pasta with alfredo sauce that I was dreaming about. So, here's the recipe:

Here's some coconutty video footage from our Florida Keys excursion. First up is some footage of Randesh, from www.TheGuana.com, who obtains fresh coconuts for Charlie Wilson's Key West restaurant, Help Yourself (see yesterday's blog post).Notice that Randesh uses a proper piece of equipment -- a large machete (or cutlass) -- which makes short, easy work of opening these precious gifts of nature! In the video footage following that, you'll see how comically difficult it is to open a young coconut when you lack the proper equipment. We actually went out looking for a machete, but could only find a large chef's knife at a local K-Mart. Yep, they were sold out of machetes! (Ironically, the chef's knife -- the heaviest one the store had -- cost about $17, while plain old machetes run just $10 or so at most hardware stores. Next time we'll keep looking...)

Isn't it amazing how many different, stunningly delicious salad dressings there are in the world ! It's mind-boggling! There could easily be an entire blog devoted to nothing but raw salad dressings -- and I bet, in the right hands, such a blog could go on 5 days / week for literally years before truly exhausting the subject.

The world simply abounds with good recipe ideas -- and "abundance" is really the mentality you need to embrace when you're doing anything in the culinary world, raw or otherwise. The other side of the spectrum is the "scarcity" perspective, which is when you think, "Oh, I'd love to write a cookboook or create a recipe, but there are already millions of them out there and all of the great culinary creations have been done already."

In all of our discussion of immune-building lately, we remembered today that we left out one enormously important item that should be present in anyone's "healing toolbox." That item is, of course, laughter. What better time than a "Fun-Filled Friday" to celebrate the healing power of humor!

Years ago, we'd heard a remarkable story about a man who had cured himself of a terrible disease using laughter as his "medicine." According to the story we heard, the man checked himself into a hotel and just watched Marx Brothers comedies for hours on end, and was eventually cured.

Hey everyone!? What a wonderful Thursday we have going here... After all, it's nearly 3:30 p.m. where I am, which means that the day is nearly over and it'll soon be Friday! Time sure does fly... Right now, it's still a beautiful fall here (in Pennsylvania, with the gorgeous leaves nearly at their changing peak) but, in seemingly no time, we'll be looking at winter in these parts.

When I announced Wendi's leave of absence a while back, I invited people to send in any questions that I might answer here on the blog. Fellow raw foodie Joanna Steven asked me on Facebook -- I'm at Facebook.com/Rawfood -- what our routine is for transitioning into winter. Well, I think she already did a fine job of covering that topic, here. But, I'll offer my own two cents here, as well, as I find it interesting.
