Six months ago, we devoted a week's worth of coverage here on Pure Jeevan to diabetes. You'll find diabetes statistics, raw food resources for diabetes, stories of people who have beaten diabetes using a raw foods diet, an audio interview Wendi and I did about diabetes, and more.

We also linked several times to the Movement to Reverse Diabetes Naturally, where people could pick up copies of two amazing DVD documentaries, "Simply Raw: Reversing Diabetes in 30 Days" and "Raw for Life." Through an enormous effort during those weeks back then, the RDN Movement spread the word about raw foods to literally thousands of people!

Those consuming a raw food diet sometimes use a dehydrator to prepare raw food dishes. They do this at low temperatures, below the point of actually cooking the foods, to intensify flavors, reduce the amount of moisture in the dish, and sometimes to take the chill off something they'd rather serve a bit warmer than straight out of the refrigerator. There is a practice that we've seen, however, that is actually cooking the very foods were taking such great measures to consume raw! Let me share an experience I had when I first started eating raw foods, that will help explain how some of us may be cooking our foods by mistake.

In the beginning of eating raw foods, my entire family loved the Vegetable Stir-Dont-Fry I used to make (you can find that recipe in the free eBook you downloaded when you first visited our site). One day I created a double recipe so we could eat more the next day, without going through the process of preparing it again fresh. The following day I took the bowl of Stir-Dont-Fry out of the refrigerator and put it into the dehydrator to take the chill off. It wasn't warming up fast enough on such a low temperature, so I thought I'd just cover the dish a little bit to trap in some of the heat that seemed to leave each time I checked the dish and stirred it around. So, I took a plate and placed it on top of the bowl with about an inch, or two, opening.

As Pure Jeevan blog readers probably know, we're big fans of running ongoing series. A good blog can never have too many, really. So today we mark the official kick-off of another super series. We're calling these articles "Pure Jeevan Guides."

Guides to what , you may ask. Well, to various topics of interest to raw foodies, of course!

I was just thinking about a particular phenomenon, but don't know what to call it. This is something I used to notice mostly after watching movies, although it's something that happens all the time in life -- and I think it does in fact relate to diet, so I'll share. Here it is:

Ever leave a theater after viewing a particularly uplifting film Recall what it's like for a moment. You walk outside, maybe with friends or family, still filled with that magical feeling of having visited another world, or having been moved beyond words, or being filled with inspiration. There's a glow about you, and the air seems sweeter as you stroll out to your car, absolutely care-free. You spin around as you walk, laughing with your friends, joking and hugging each other, engaging in imaginative conversation all the way home -- and the spell lasts for a good long time thereafter. Oh, I love, love, love great movies!!!

Let's continue this video cavalcade with a very quickly made video basically peeking inside Karyn's Raw in Chicago. I didn't really have an opportunity to spend a good deal of leisurely time there, as I did with two other Chicago area restaurants, so this video is *very* basic, and not at all thorough in terms of what is offered there. Some of you who are new to raw foods may be happy to learn that there are festivals for individuals interested in the raw foods lifestyle! They are a fantastic opportunity to meet like-minded friends. For those of you who attended the Raw Spirit Festival in 2008, seeing images from that event may stir the magical memories you collected while there.

Last year when I organized a raw food spiritual retreat at an ashram, I met some very lovely people. Two of those individuals were Patty and Denny (you can visit their blog to say hello to them). They were new to gourmet raw foods, so they were enthusiastic learners at the retreat. When they returned home after the blissful weekend, they began using their new raw food knowledge. At a recent raw food meetup, I was surprised that so many raw foodies aren't aware of the raw almond controversy. Maybe most of our Pure Jeevan family members aren't aware of the fact that most almonds are not raw. It's sad, but very true. In 2006 a mandatory almond pasteurization ruling was created. The rule was passed sometime in 2007, I believe, and since then it's been near impossible to purchase truly raw almonds. Maybe pasteurized almonds don't seem like a big deal to most people.

Raw almonds are alive, yet dormant until they are soaked. Once soaked (or moistened in the springtime rains when outdoors), they sprout to begin growing into almond trees. Once soaked and sprouted, the nutritional content of the nuts change significantly. They are alive and filled with protein and so much more!
