Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? WOW!!! WOW!!! WOW!!! Check out the response from 40+ people from around the globe. It's a little overwhelming to see this much positive energy in one place. Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. We just returned from the East End Food Co-op, where we answered raw food questions for two hours. We were still answering questions on our way out the door, and would have stayed longer but the place was closing. ;-) So, if anyone from this evening stops by our site and you still have questions, just comment here (or send me an email) and I'll be happy to answer them.
I'm more of a one-on-one kind of person, so I was a bit nervous about sitting in front of everyone to answer questions. Jim and KDcat were there to help me, of course, otherwise I probably wouldn't have been there at all. Once people started arriving, I was comfortable. The first people who entered the room were super sweet and I could tell they were genuinely nice people. Then little by little the room filled up, and I was surprisingly comfortable.Maybe in addition to all of the other positive changes in my life, my self confidence is getting better, too!
This recipe is an adaptation of one from "Rawvolution", by Matt Amsden. As of this point in time, "Rawvolution" is my favorite recipe book. Most of the recipes are high in sodium and fat, but very satisfying for those who are used to eating cooked foods.
Egg-less Egg Salad

Almost anything tastes great in salsa. This one is fairly basic, so feel free to spruce it up with some of your favorite ingredients. Jim here... I was listening to a radio commercial the other day that promised to reveal the "secrets that credit card companies DON'T want you to know." You hear that kind of rather manipulative marketing all the time, right? It's a psychological thing, I suppose -- filling your mind with intrigue almost instantly. My credit is pretty decent, but I was thinking, "Wow, I wonder what those secrets are?!" We humans are curious creatures, aren't we?
But then I started to laugh to myself, imagining a raw foods radio spot adopting that technique. "Buy our special report and learn all of the Secrets that Raw Foodists do NOT Want YOU to Know!!!" And then I laughed some more. Know why? Because, when you think about it, there are absolutely, positively NO secrets raw foodists don't want you to know! Isn't that stunningly cool? In fact, the entire message of the movement is conveniently included right there in the words "raw foods." It couldn't be simpler -- the cure for what ails so much of the planet, neatly summed up in two words.

To summarize yesterday's post, even though this sounds dramatic, the truth is: Wendi was dying. The first doctor essentially sent her home saying there was nothing wrong. The second doctor confirmed she had Lyme disease, but was too late for his method of healing, since the Lyme had already become chronic at that point. He could only offer understanding of her situation and a trial and error method of conventional medications, which rarely (if ever) heal Lyme patients. A supplement that many raw nutrition gurus recommend as essential to health for all people was actually putting Wendi's body, already struggling with Lyme bacteria, into an extreme state of distress. And finally, our own knowledge of health, diet, and healing (even though extensive and accumulated over 30 years) wasn't adequate for healing Wendi's body of Lyme, either.
I ordered a case of organic, fresh-picked, perfectly ripe oranges!! Yay! They were shipped in less than 24 hours of my order and they should arrive soon! I asked for some grapefruits in there, too, even though I haven't really liked the taste of them in the past. I'm thinking that fresh ones will taste a lot better--not to mention that I never tried an organic one before. If I still don't like them, Jim and KDcat will eat them. ;-)

The produce was amazing and it was so fun to actually see pictures of the farm workers and hear about the daily ins and outs of life on the farm. If you've never heard about a CSA, maybe you'll want to see if you have one in your local area this coming spring.

Okay, it's question day once again -- and we've received some great ones lately. Before I begin, just let me reiterate once more that Wendi and I can't give medical advice here. We're motivational, inspirational raw food / natural health writers and educators (considerably knowledgeable and experienced ones, I might humbly add!); not doctors.So, whenever we give "advice" (or, whenever our writing appears as such), what we really mean is, "Well, if that were me, this is what I would do." Not only do we not give medical advice because we're not doctors (as if that wasn't enough of a reason!), but we also know that each person is different and, as such, all symptoms and conditions are unique to each person's individual situation. If person A and person B are both experiencing high blood pressure, it could easily be two different things causing that -- and the treatments or approaches could differ tremendously. When you get into raw foods, one thing you're probably going to notice from time to time is that others are "concerned" about your health. This is hugely ironic -- not only because it's likely your own concern about your own health that brought you to raw in the first place, but because you most likely hold the conviction that the raw food diet (or some close variant of it) represents the most healthy dietary regimen available for humans.
