Continuing on, again, with Wendi s San Francisco travelogue:

After leaving Pete and Blessing, we had a little time before our next meeting. So, KDcat and I explored San Francisco a bit. We saw the largest rainbow flag we've ever seen, experienced the steep hills (much steeper than the ones in Pittsburgh), and checked out an overview spot called Twin Peaks. Our San Francisco host taught us later that evening about how to "curb" your car and always apply the parking brake (which is necessary in a place with such steep hills).

Later we met up with Shivie and Cemaaj, who heard we'd be in town and invited us to visit them for a raw meal? in their home. Wow, what a delicious and beautiful meal we were served! Shivie and Cemaaj are gentle, loving people with a true gift for preparing and serving gourmet raw foods. We were honored to be invited to visit with them and loved them both instantly. They were a lot of fun getting to know, and very generous (sending raw foods with us before we left to eat and share with our San Franciso host). Cemaaj is also a gifted musician and taught KDcat some rhythms on the djembe African drum, which she quickly learned and enjoyed very much! Cemaaj is a gifted teacher and great with kids. It was fun watching him ease her into the instrument, which she now says she'd love to own and practice on!

Continuing with our Taco Week, here's a quick and easy (and delicious) salsa recipe. You can really have a lot of fun with salsa, and can get highly experimental if you like. Almost anything tastes great in salsa. This one is fairly basic, so feel free to spruce it up with some of your favorite ingredients. Let us know in the comments section some of your favorite variations so you may inspire others!

It's been a while since we offered an update on Wendi's health challenge. So, I asked if she felt up to writing a blog post to let everyone know what she's going through, highlighting a few new directions taken of late. As usual, I added some color splashes and graphics here and there, just for aesthetics. But, the following post is from Wendi. -Jim

Let's take a quick look at a few dessert pictures, then compare and contrast, shall we First up is a small slice of some normal pastry:

Looks sinful, right It seems to proudly display its bready crust, its gooey chocolate center, some sort of butter-rich top layer coated with lovable little bits and bobs, and a liberal sprinkling of confectioner's sugar to make the whole thing cute as a wintry scene from one of those holiday specials hosted by the claymation likeness of Burl Ives. I'm sure it's delightfully rich, too. A tad small, though, eh ? It's probably all anyone can take of such decadence without worrying about clogged arteries or putting in extra time on the tread mill for the next three days.

Raw Foods Demo and Dinner?

Today I am thankful for the small things in life that often go overlooked. I'm thankful Jim made some sweet dessert last night when I wanted it. I'm thankful KDcat is having a fun time with some of her friends right now. I'm thankful that: the trash collectors just picked up the garbage (we don't produce a whole lot since going raw); the older woman across the street has started smiling and being nice to KDcat; the sun is out and the snow is melting; I have another computer job to work on for some income.

Mistakes are bad, right Well, not always. Here's an example of a great one, and it's something that demonstrates a conviction I have about raw foods! You see, in all of this talk of moving to Portland, I made a huge gaffe recently in my thinking about finances.

You see, I was pondering the terms of a home loan one afternoon -- percentage rates, down payments, monthly payments, tax escrows, etc. It was all really dry, boring material. Suddenly, I thought to myself, "Wow, here we are about to buy another house, after owning this one for so many years. In less than 10 years, we would have owned this one outright, but now we'll be starting over again with a 30-year mortgage."

Here it is, the new year. I've never been excited about the end of one year and the beginning of the next, but this time it's different.So many things have changed in our lives here at Pure Jeevan, bringing us to this point in time--a time that we are ready for and fully embrace. This year is going to be RAWmazing!

Many plans and projects have been started over the past few years, and this is the year that will see many of them fully blossom. The beauty of these projects is that they are about so much more than just us, or just you, our lovely readers. Our mission is to help as many people as possible to wake up from a life that's only partially being lived.We believe there are many tools that can be used to fully wake up and embrace life; one of them is eating a raw food diet. We raw foodists know that there is a lot more to life than what we've been taught to believe and expect, and many of us are helping others learn this beautiful fact. We are shaking up many of the core beliefs on which most of us have based our lives. I strongly believe that many of us in the raw food movement can say: We Are The Ones! We are the ones who are here to make positive changes, to help others fully embrace life, and to have fun, fun, fun! Why waste even one more day of your precious life doing something you don't enjoy doing? It's time to have fun, to feel the love that exists within and all around us, and to help others experience the same! Finally, some super news to share!? On Monday, after a l-o-n-g wait, Wendi finally had her appointment with a actual LLMD. (That stands for "Lyme Literate Medical Doctor."? If this and the news of Wendi's Lyme Disease is new to you, check out this post.)

I'll cut straight to the good part: Her prognosis is excellent! Yes, she's still in a world of pain and misery at the moment, but he believes (based on her blood work and her symptoms) that we've caught this early enought to fully eradicate the Lyme. (At least, that's how I understand it. I'm actually not clear on whether Lyme is ever 100% eradicated, or if it's just forced into dormancy or irrelevancy. Perhaps Wendi can clear that point up later.)

Are raw foodists invincible to the common cold? I have to admit that I kind of assumed that was the case. If it's true, at what point does the invincibility kick in? I've been raw for over three years (over two at 100%) and yet the past few days have found me overcome with sneezing, sore throat, runny nose, and fatigue.

My first thought, once my throat started to hurt, was: "Did I eat anything different recently that I'm reacting to in a negative way " But, nothing had changed.My diet is relatively clean, with the exception of the times when I consume too much nut dip. So, when the sneezing and runny nose were added to the sore throat, I knew something else was going on. I had to admit it: "I'm not invincible."
