Today we bring you the last of our personal video interviews conducted while at the Raw Spirit Festival (RSF East 2009). I'll have one other highlight reel to run next week, just to round out this series by showing some of the additional ambience there.

So, we've finally come to the "infamous Viktoras video"! I smiled as I wrote that because it was quite the topic of discussion around our camp site. You see, one of my fellow campers, BH, was with me as we interviewed Viktoras (she filmed the interview, in fact) -- and, well... let's just say he strayed a bit from the expected raw food subject matter. I was worried that poor BH would be scarred for life after witnessing the discussion, but she did seem to get a good laugh out of it, and I suppose she's fully old enough to attend an R-rated movie.

The other day, before grocery shopping, I didn't have a lot of food in the house. When that happens, I usually take a look at what I have and then try to come up with something tasty. It's kind of an art form, to create something out of next to nothing. I think I learned the art from my mother, who had to make things stretch on a very minimal budget.

Here's what I created, and it turned out great!

Isn't it amazing how many different, stunningly delicious salad dressings there are in the world ! It's mind-boggling! There could easily be an entire blog devoted to nothing but raw salad dressings -- and I bet, in the right hands, such a blog could go on 5 days / week for literally years before truly exhausting the subject.

The world simply abounds with good recipe ideas -- and "abundance" is really the mentality you need to embrace when you're doing anything in the culinary world, raw or otherwise. The other side of the spectrum is the "scarcity" perspective, which is when you think, "Oh, I'd love to write a cookboook or create a recipe, but there are already millions of them out there and all of the great culinary creations have been done already."

Today for "Take the Time Tuesday," we'd like you to take the time to meet Mimi Kirk, whom many of you may know as the winner of PETA's "Sexiest Vegetarian Over 50" contest last fall. If you're interested in longevity, and how diet influences the way we look, act, think, and exist, then you'll definitely want to listen closely to what this vibrant woman, who is 71 years young, has to say. Recently, the wife of a friend of ours decided that she wanted to lose 20-25 pounds. As far as we know, she follows pretty much a "Standard American Diet." We've heard that she doesn't care for red meat, but she does eat other meats, plus a good deal of dairy (which, we believe, she regards as a healthy food choice). She's apparently tried a number of exercise regimens, and a few fad diets, with no luck on losing these 20-25 pounds. (Frankly, we haven't seen her many times, but would not have guessed that she had 25 pounds to lose. But, we'll save "self image" as a topic for for further posts.) In any case... Frustrated, she decided to see a hypnotist!

Our friend accompanied his wife to the initial consultation. He said it was actually interesting. The hypnotist basically sits you down and walks you through some fundamental psychology, demonstrates a few of the primary principles of suggestion (e.g., showing you how easy it is to, say, imagine the sourness you would experience when biting into a slice of lemon), and then lays out how the program works.

In August of 2007, I was on the verge of an emotional breakdown. My entire world had changed since I adopted the raw food lifestlyle. My body had released nearly 100 pounds of unhealthy weight, my health had dramatcially improved, I ended unhealthy friendships, I released a lot of stored emotional memories from childhood abuse, I realized that I wasn't living in a location that met my needs anymore, and so much more. I can't think of any aspect of my life that hadn't changed, in one way or another, over the year and a half that led up to my urgent need for a retreat.

Today, we'd like to take the time to introduce some raw athletes who continually inspire others. There is a huge misunderstanding about the need for protein in our bodies, especially within the world of competetive sports. Many believe that without large amounts of protein we can't be strong, we can't build muscle. Raw athletes are proving that a vegan diet not only supplies enough energy to sustain the human body during competition, it also allows them to many times outperform competitors who are half their age.

Who Would Win

Over the weekend, we attended a fairy festival in Eugene, OR, called Faerieworlds . ?It was great fun -- loads and loads of interesting shops, festival-goers in costumes ranging in complexity from simple fairy ears to full-on ensembles, and some spectacular tribal bands on the main stage all day long.

What was unexpected, though, was seeing not just one (which, alone, would have been impressive), but *two* food carts dedicated to raw foods. ?The first was called Luminescent Foods:

Today, however, we're doing an outing with all of the prep work done at home -- so no need to pack knives and cutting boards! We're also focusing in on a few seasonal ingredients. Six months ago, we devoted a week's worth of coverage here on Pure Jeevan to diabetes. You'll find diabetes statistics, raw food resources for diabetes, stories of people who have beaten diabetes using a raw foods diet, an audio interview Wendi and I did about diabetes, and more.

We also linked several times to the Movement to Reverse Diabetes Naturally, where people could pick up copies of two amazing DVD documentaries, "Simply Raw: Reversing Diabetes in 30 Days" and "Raw for Life." Through an enormous effort during those weeks back then, the RDN Movement spread the word about raw foods to literally thousands of people!

When you get into raw foods, one thing you're probably going to notice from time to time is that others are "concerned" about your health. This is hugely ironic -- not only because it's likely your own concern about your own health that brought you to raw in the first place, but because you most likely hold the conviction that the raw food diet (or some close variant of it) represents the most healthy dietary regimen available for humans.

Nevertheless, you'll receive a lot of concern. You'll receive it even when you have that "raw glow" and are looking and feeling better than you have in years! The main concerns:
