I've done it, I've done it, I've DONE IT!!!? I've perfected a recipe for raw vegan potato pancakes! My friend Melissa shared her potato pancake recipe with me and, like always, I had to play around with it (I rarely go by a set recipe). Had it not been for her original recipe, I wouldn't be writing this post! So, thanks, Melissa!!
In the next day, or two, I'm going to type up the recipe and send it out to all of our subscribers. So, if you haven't signed up recently for either our newsletter or the two free eBooks, do it soon! Last night, Jim ate the first warm food he's had in over a year! I created a dinner that was placed in the dehydrator for about an hour before it was served. This dish is delicious at room temperature, also, but I thought it might be more special if I served it a bit warm. Jim thought it was a nice change to the colder temperatures of the smoothies he's been practically living on!

I started jumping up and down last night with excitement when I received a call saying that the bellydancing class I've been wanting to take at Khafif Studios has an opening! Yay!!!

On this lovely Valentine's Day, I am focusing on how thankful I am for LOVE! I'm not into the whole this-is-the-day-you-are-supposed-to-show-love thing, though. I think love is something that should always be around, felt, and shared. Every day is a new day to express the love you have in so many varied ways, why hold it back for one special day a year?
Jim here... Anyone else like a good funky beat ? Who's familiar with Kool & the Gang's 1973 classic, "Jungle Boogie"? Surely a lot of people know that awesome tune. If you do, recall some of the main lyrics: "Get Down Get Down, Get Down Get Down!" That's the tune I want you to keep in mind as you read this post. Hear the drums, the bassline, the electric guitar, the horn section, the voices, the phrasing, the overall dynamics of that distinctive groove. Consider how magically it all comes together.

Hey everyone!? What a wonderful Thursday we have going here... After all, it's nearly 3:30 p.m. where I am, which means that the day is nearly over and it'll soon be Friday! Time sure does fly... Right now, it's still a beautiful fall here (in Pennsylvania, with the gorgeous leaves nearly at their changing peak) but, in seemingly no time, we'll be looking at winter in these parts.
When I announced Wendi's leave of absence a while back, I invited people to send in any questions that I might answer here on the blog. Fellow raw foodie Joanna Steven asked me on Facebook -- I'm at Facebook.com/Rawfood -- what our routine is for transitioning into winter. Well, I think she already did a fine job of covering that topic, here. But, I'll offer my own two cents here, as well, as I find it interesting.
I've received countless emails over the past few days, thanks to Kevin Gianni's video (below) about the potato pancakes I made for he and Annmarie when they were visiting. In many of the emails you were thanking me for the free eBooks, but some of you had questions (and even some concerns) about sweet potatoes. I've answered you all individually, but I thought it might be a good idea to spend some time discussing the sweet potato a little more. To summarize yesterday's post, even though this sounds dramatic, the truth is: Wendi was dying. The first doctor essentially sent her home saying there was nothing wrong. The second doctor confirmed she had Lyme disease, but was too late for his method of healing, since the Lyme had already become chronic at that point. He could only offer understanding of her situation and a trial and error method of conventional medications, which rarely (if ever) heal Lyme patients. A supplement that many raw nutrition gurus recommend as essential to health for all people was actually putting Wendi's body, already struggling with Lyme bacteria, into an extreme state of distress. And finally, our own knowledge of health, diet, and healing (even though extensive and accumulated over 30 years) wasn't adequate for healing Wendi's body of Lyme, either.
