While I was growing up in the Midwest, I had a rich uncle who lived out East in Philadelphia. I didn't know him very well at the time, but would often glean stories via the family grape vines of his business successes. After high school, I attended college in Northeastern Pennsylvania -- Wilkes University -- where, incidentally, I first met Wendi! :-)

Being out there, I got to visit my uncle from time to time, and dine with him and his family. ?Among other things, he was quite the gourmand. I'm not so sure what he'd have thought of raw foods, although I suspect he'd have appreciated the many gourmet efforts.

There's a peculiar yet recurring kind of argument I get from a number of people from time to time when the subject of diet or health arises. Basically, it goes like this: "Yeah, all of those vegetables and exercise might be good for you, and all of that meat and fried food I eat might be bad for me, but what if you get hit by a truck tomorrow "

This sort of perspective is interesting to me for at least two major reasons.

Sorry for the strange behavior of this site over the past few weeks, friends. As a former professional web programmer, and always a?bit of a mad hacker, I'm usually really great at keeping the web end of Pure Jeevan running very smoothly.

But, this is a Wordpress blog -- and so you have things like plugins and widgets and themes and updates, all interacting (and sometimes conflicting) with one another. I've noticed lately that this blog home page has developed all sorts of peculiar issues, not the least of which is a very slow-loading tendency.

Jim here... When you're a committed raw foodie, certain activities that most other people consider routine can become somewhat difficult if you don't apply a bit of forethought and planning. Take traveling, for example -- specifically, flying.

What if you're flying out of town -- say, to the Florida Keys (wink, wink) -- and want to make sure you'll have enough to eat during the day-long trip? What if you also want to bring along some staple raw food items as well ? What if some of these are generally refridgerated ? How can you accomplish all of that?

So it's time to continue that discussion on the aforementioned fringe one percent -- those people who will not accept your conscious intention to pursue your own health via this path. Please keep in mind during this discussion that we're only discussing just that one percent, not people in general. So, this is, I hope, relatively rare.

To begin, I'd like to stress a few points:

Jim's mother, JoAnn, LOVES pasta. I'm sure many of you can relate to that---pasta is a big part of the cooked diet and just about everyone loves it. When going raw, many individuals say they just can't do it because they miss pasta too much. Well, that's no longer a problem. There is a raw way to make pasta and you are going to love it if you haven't experienced it, yet!

As a gift for Mother's Day, we sent a pasta-making tool to JoAnn along with a pasta sauce recipe we created for her (see the Paradisio Pasta Pomodoro entry). To make it easier for her to learn how to create pasta, and to answer some of the emails we've been receiving about the device we used to make the pasta, we have put together a two-part video showing how to make delicious, beautiful raw pastas! For today's Makin' It Monday feature, we'd like to present "Salsa Campechano." We'll have to admit, though, that we do not speak Spanish. So, we have to give some credit to Google's online language translator. When we went to name this recipe, Wendi suggested that this is a "manly" dish (since I created it). However, we didn't find the perfect Spanish word to fit the recipe.Then, considering the walnuts in the recipe, Wendi suggested that perhaps "hearty" was a better adjective. Google returned the Spanish word campechano for this, and we immediately thought: Yes!, that sounds just perfect!? So, here's an amazing recipe for you. It's a hearty salsa recipe, but I actually like to eat it as a soup.
