Welcome to Episode FIVE! Today we're focusing on our old friend the WALNUT. Since it's officially fall, walnuts are in season right now. What better time to enjoy one of nature's tasty, heart-healthy treats?

Some health/nutrition summary info: Walnuts provide a great source of protein, fiber, B vitamins, Vitamin E, anti-oxidants to help prevent cancer, and Omega 3s to help your heart and vascular system. They also help lowering your cholesterol and blood pressure, and contain numerous beneficial amino acids and polyphenols (compounds linked with reduced risk of heart disease and cancer).

As we promised yesterday, we're featuring a wonderful (and LONG!) video interview today with the incredible John Kohler of Santa Rosa, CA. You may be familiar with John from some of his popular web sites, most notably his "Living and Raw Foods" community site at www.RawFoods.com. Below are parts one, two, and three of Wendi's interview. They're roughly 10 minutes each. (That's a lot of time, I realize, but at least check out Part 1 if you're short on time, as it offers an amazing look at John's front yard.)

Wendi said she was at a loss for words when interviewing John at his home (and you'll soon see why!), because what he has done on his 1/10th of an acre lot is *phenomenal*. He told Wendi off the video that it's all a matter of trial and error--finding what grows easily and well, and working with those plants the most. If something takes a lot of effort, or is difficult to easily grown, he skips it and focuses on what can give the most yield for the least work. Almost everything grown on John's land is edible!

The video of John's garden and the pictures (see yesterday's post) are enough to inspire ANYONE to plant even a small garden for themselves! WOW!

John has a lot going on, including a monthly potluck. Wendi and KDcat happened to be in town on the night of the March potluck, so Wendi was invited to speak at the event. It was a nice, laid-back group of people, Wendi said, and they sat at a long table talking about the raw lifestyle, health issues / concerns, what children are fed in school, and so much more -- a really nice group of people, Wendi said, noting she'd love to visit them all again. Before we moved to Portland, Oregon, land of all things fresh and organic within walking distance, we had to drive quite a distance to reach the food co-op (the only place that had a good selection of organic produce and other raw food necessities). So, we only went shopping about once a week. It took a lot of trial and error to find ways to keep our weekly produce fresh for about a week.

We learned which fruits and vegetables stay fresh the longest, and which go bad the fastest. Based on this, we stocked the refrigerator accordingly (and used up the produce accordingly, as well). The fruits and veggies that stayed fresh the longest were stored in the backs of the shelves (things like carrots, beets, broccoli, cauliflower, apples, etc.). Next we stored the greens that lasted a pretty good amount of time (like kale and collards). And in the front of the shelves and in the door, we stored the more delicate greens (like lettuces and herbs).

Persimmons are a tad unusual, aren't they? Perhaps they're simply uncommon. After all, few major grocers carry them regularly (at least, not in our area). But, occasionally, they crop up as a specialty, limited-quantity offering. That's more or less how we obtained some recently. Wendi *loves* them, so we quickly snatched up a few at our local co-op last week. Here's the vid (below).

I knew right away that I would be filing this under our "Fun-filled Friday" bannner. Finding pawpaws is a huge treat! They're surprisingly little-known, and also very surprisingly tropical in nature. Who would think that something this delicious and exotic-tasting would thrive in so much of the non-trpoical world!? In this episode, Melissa demonstrates how to make raw tortillas (this recipe uses a dehydrator). You'll be amazed at how pliable these tortillas are!!

I've already posted the recipe for this, but I wanted to talk about the orange pudding a bit. Since going raw, I've become a mostly intuitive eater. Whatever I feel like eating is what I eat. This usually means I am eating the same food for an extended period of time until I feel drawn to something different. Lately it has been the orange pudding.

I've been starting my mornings with a large bowl of it. If Jim is making lunch then I'll eat the salad or nut dip that he makes, otherwise it's orange pudding again. Then, if I didn't eat a salad during the day I usually have a salad for dinner and...a dessert of--you guessed it!--more orange pudding.

That's basically my post today, boiled down into four words. From all I've read, from all of those I've talked with / emailed / interviewed, and certainly from all I've personally experienced, this is a key concept that, in my view, it's best to come to terms with as soon as you can.
