Wow, so much happened in Chicago that it's taking literally weeks to show it all to you!? But, hey, it's also a lot of fun to share this stuff. Wasn't that a great talk yesterday with Kathy and Danny Living !? If you haven't seen it, definitely scroll down and watch!

Here's another one for you. Meet Hatice Yavuz, co-owner along with Chef Mehmet Ak of Cousin's Incredible Vitality, another great raw destination in the Windy City. "Hatice" is a Turkish name, in case you're wondering. The "c" is pronounced like a "j" -- so, her name sounds like "huh-TEE-jay." Our interview with her ran a little long, so I'm going to have to break it into two parts. Here's part one:

Pure Jeevan, of course!

Take the Time to Meet...

Below are two variations of the same issue: I'm too tired and don't have enough time to be healthy. The irony, of course, is that the more raw foods you eat, the more energy (and therefore time) you have!

By the end of the day I am so exhausted I'd rather not eat than go in the kitchen & try making something raw.

How do I stay raw with all the food prep and my lack of time and life's pressures

This video is nearly 10 minutes long (sorry, we'll aim for shorter ones in the future), but shows a full process for making a delicious, spicy nut dip. From there, we show two options for making the sandwich -- one using dehydrated raw bread, another using lettuce as the wrapper. Jim here again... Wow, that's an excerpt from a very fired-up Wendi, writing a few years ago about her frustration over the USDA's absolutely insane regulation that nearly all almonds sold in the United States must be treated with chemicals or heat prior to sale. I'm sure you know the story by now, so I won't rehash it here. (In case you do not, you can read about it in our original post, Wendi's Almond Frustration post (which even recounts a disturbing, related dream she had about this issue), or our last update post. It's an issue we've been following for years here.)

Who's been making small changes and feeling a bit brighter lately, since we've been talking about brain health? Today, let's continue focusing on some things we can actively do to minimize our chances of developing memory problems like Dementia or Alzheimer's in the future.

Yesterday we focused on heart-healthy tips to increase brain function (since heart disease seems to be linked with Alzheimer's) and I shared a heart-healthy recipe with you. Today, we'll focus on inflammation.

Here's Part Two of our interview with Hatice Yavuz, co-owner of Cousin's I.V. raw restaurant in Chicago. Yesterday we talked a lot about Cousin's restaurant and the stories behind that (as well as some interesting notes about European and Turkish culture and attitude toward raw foods). Today we'll get into some of the effects experienced by many after going raw -- things like raw food detox and the strengthened connection between mind and body. Interesting stuff!

As many of you know, Kevin and Annmarie Gianni (of Renegade Health) have now started their RV tour, for which they selected Pittsburgh as their official kick-off location. While here, we at Pure Jeevan took a special ride in "The Kale Whale," their veggie-oil-powered RV. Inside, we enjoyed a comfortable ride (which included hanging out with Johnny 5 -- their cat -- and drinking some hot tea prepared right there in the Kale Whale). Outside, we endured the freezing cold temperatures of Pittsburgh while pumping filtered used veggie oil into special holding tanks in the RV. I'm not sure I'm getting enough carbs 'cuz I eat very little grains or beans and I am always worried of overdoing fruit.

Well, rest assured that if you are consuming enough calories with your diet, and not exclusively eating fats and proteins, you are most likely getting enough carbohydrates. Carbohydrates exist in just about anything you can eat. By simply eating enough food during the day, you can easily meet your body's carbohydrate requirements.

There are two classifications of carbohydrates: simple and complex. Grains and beans fall under the complex category, while fruits fall under the simple category.
