While on our walk, Pete pointed out that in the building on our right there are some amazing kale chips being produced. Kale chips ! I asked if he was referring to raw food kale chips and he nodded. Of course, I had to investigate and find out who was producing them and possibly meet the person. Well, what a treat we were in for!

One of the workers directed us to an office nearby where we met a lovely woman named Blessing. It turns out, Blessing is the producer of the kale chips we received from our Official Snack Sponsor during our tour, Natural Zing. Not only does Blessing produce some of the most popular kale chips in the raw community, her company is also the manufacturer of the famously delicious "Raweo" cookies (which you can find on Natural Zing's site)!

Last year when I organized a raw food spiritual retreat at an ashram, I met some very lovely people. Two of those individuals were Patty and Denny (you can visit their blog to say hello to them). They were new to gourmet raw foods, so they were enthusiastic learners at the retreat. When they returned home after the blissful weekend, they began using their new raw food knowledge. Here are some excerpts of emails I have received from them since the retreat last year:

Well, you said you're motive in putting on this retreat was simply to pass on this valuable information and to help others; you were very successful where we're concerned - it is no exaggeration to say that you have changed our lives forever.

We've been almost 100% raw since the retreat. ... We're so excited about this new way of eating that we bought a new Vita-Mix. ...We can actually say that this has been our most notable and enjoyable dining experience - ever, in our entire lives! Jim here... Exactly one month ago today, I announced my intention to do a month-long trial of a low-fat raw vegan protocol largely based on the well-known 80-10-10 diet. I posted a half-way point update on May 15th, and now here we are at June 1st already. So, are you ready for the thrilling conclusion

As I've stated before, I went into this experiment rather hard-core, with one full week of zero overt fats, and then gradually introducing a few richer ingredients (although keeping within the 10% fat ceiling). I found much of the past month to be an exercise in restraint and self-control, similar to the issue many people face when going raw while the rest of the family is still eating cooked foods.However, it got significantly easier as time passed.

Tomorrow I'll finally be posting about the 3-Day Raw Food Spiritual Ashram Retreat that I organized. I took a few days to myself after the event, and then I needed to catch up on a lot of things (which included formatting an almost 150-page publication). It's hard to believe that two weeks have passed, already, since the retreat ended.

I have a lot of photos from the event! Some of the guests prefer to remain anonymous, however, so I can't share all of them with you. However, there are a lot that I can still post on a public page for you to view! I'm waiting to receive some more images from the ashram's camera. Once I have them, I'll be able to complete the photos pages and share images from that wonderful weekend.

BIG THANKS to one of the guests, Angel, who happily took my camera and captured images that weekend. I am extremely grateful that she did, and I'm also impressed with her creative gift with photography! The image she captured of another guest, Faye, is absolutely beautiful! I'm looking forward to sharing the pics with all of you!

Next weekend I'll be at the Green Festival in Washington, DC. helping Natural Zing at their vendor booth (I'm completely in love with Natural Zing because of their honest business ethics and commitment to having the highest quality products available---and the president is a truly beautiful individual). My dear friend RawBin will be picking me up next Thursday for a RAWsome weekend and I'll fly back on Monday!

Continuing with our Taco Week, here's a quick and easy (and delicious) salsa recipe. You can really have a lot of fun with salsa, and can get highly experimental if you like. Almost anything tastes great in salsa. This one is fairly basic, so feel free to spruce it up with some of your favorite ingredients. In some recent Summertime Raw posts, we've focused on preparing delicious, nutritious raw foods *while* on the go. Today, however, we're doing an outing with all of the prep work done at home -- so no need to pack knives and cutting boards! We're also focusing in on a few seasonal ingredients. Sam will demonstrate how to make a simple Peach Pudding, which she tells us is the invention of her very good friend Anthony from Rawmodel.com. We think Sam did a super job! Don't you ! Jim here... Wow, what a great week it's been here at Pure Jeevan, focusing on diabetes for five straight days!? To cap it off, I have some fun news to share:? Tomorrow is Wendi's birthday!? And, guess what ? When I asked her what she wanted to do to celebrate this year, she said she'd like to devote her special day to spreading the word about the Movement ot Reverse Diabetes Naturally. So, we made some calls and sent out some press releases.

A few venues were enthusiastically receptive, so we're hitting the streets tomorrow -- celebrating Wendi's birthday by handing out diabetes awareness literature! Here's the press release I sent to the media, which tells where we'll be. If you're from Pittsburgh, we hope you'll stop by to say hello and/or ask questions about natural diabetes reversal and of course raw foods!
