When it comes to healthy eating, most of us know what is and isn't healthy for our bodies. Sure, we've been a bit confused by what the media and our government tells us, but overall I think we can all confidently say we know that consuming fresh fruits and vegetables is going to be a healthier choice than eating a McDonald's hamburger and fries. Right

But, what do we do when we're dealing with stress in our lives? What if when we're stressed we instantly head to McDonald's to eat the burger and fries we know aren't healthy for us? Or what if we consume large quantities of cakes, candies, or ice cream when we're overcome with stress

All this week we're continuing to feature a variety of answers to the question "Are Raw Foodists Crazy " from various friends of Pure Jeevan. Jim here... Wow, it's Monday, April 27! Let's do something different today: Let's celebrate Monday instead of bemoaning this day that represents the taditional start of the dreaded work week. Why? Because it's our sincere hope that whatever you do in your work week is a labor of love. And, if you're not quite there yet, then celebrate the fact that you WILL be there sometime soon. For us, it means another week of working to inspire you to achieve optimal health -- and that's not "work" at all; it's actually FUN!

So, without further adieu, let's jump into this week's fun. Our good friends Melissa and Dave Sokulski have launched a site recently called FoodUnderFoot ("unleash the energy of wild edibles"). Even in it's young seedling state, I think it's already a fascinating site, and promises to become an encyclopedic web destination for anyone interested in foraging wild edibles. Jim's mother, JoAnn, LOVES pasta. I'm sure many of you can relate to that---pasta is a big part of the cooked diet and just about everyone loves it. When going raw, many individuals say they just can't do it because they miss pasta too much. Well, that's no longer a problem. There is a raw way to make pasta and you are going to love it if you haven't experienced it, yet!

As a gift for Mother's Day, we sent a pasta-making tool to JoAnn along with a pasta sauce recipe we created for her (see the Paradisio Pasta Pomodoro entry). Jim here... As I hinted at last week, I decided to try changing things up a bit and seeing what I thought of it. The salad you see above included the first cooked food I've had in more than two years. If you look closely, you can see that I sprinkled on a few spoonfuls of black beans. Also, in the upper left corner, there's a small spoonful of quinoa. I don't want to give the wrong impression here: ?This blog will certainly remain a major go-to source for raw food nutrition information. It's just that, today, I want to talk about experimentation a little bit.

First, I think it's generally healthy to experiment with your diet -- especially when you get the sense that something isn't working in your current diet. The fact is, diet is a dynamic thing, not a static aspect of your life. It has to be this way because so many factors affect our physiology on a day-to-day basis. Off the top of my head, these include the facts that:

I'll leave you with an old Halloween picture of me before I started eating raw foods. Halloween used to be the day I'd dress up and feel okay being myself, because I was in costume. It's funny to me that this year I feel no need to cover up in order to be myself. Halloween is still my favorite holiday, however!

Q. I recently read the following on Dr. Micahel Eades' (dr. protein power) blog & would appreciate your opinion:

Have you any comments on the RAW FOOD movement and particularly Dr. Cousens claim of a ?cure ?

Dr. Eades' response:

I don t know anything about Dr. Cousens. I do know that people in the raw food movement seem to believe the raw foods deliver ?natural? enzymes unaltered by cooking to the GI tract to help it do its work. Problem is these ?natural? enzymes are made of protein and are denatured (the same alteration process as cooking does with heat) as soon as they hit the stomach acid. The fact that proteins can t make it through the stomach without being completely altered is why diabetics can t take insulin pills and have to get their insulin via injection. Insulin is a protein, just as enzymes are, and it can t make it through the stomach without being denatured.

I'm still doing my nine-day mono meals for Navratri. Since it's Makin' It Monday, instead of actually makin' a recipe, I'm dreamin' about it! After talking with my sweet friend Melissa, I thought I wanted to eat spinach pie when I end my mono meals. She was talking about it, shared how she was going to create it, and my mind was filling with the image of spinach pie, the smell and taste of it, and I wanted it right then.But, we don't have any spinach in the house right now. Since I end my mono meals after tomorrow's lunch, and don't have time to buy spinach at the food co-op, I decided to dream some more about what I'll be eating for tomorrow's dinner.

Then it came to me. I want beet pasta! Not just any beet pasta, but beet pasta topped with a creamy alfredo sauce! I picture it in my mind; I can imagine the taste of it, the texture, and it's so delicious. I think I want something green with it, too. Perhaps I'll start with a small salad. Ooh! Yes, that's what I'll do!
