Today I am thankful for the small things in life that often go overlooked. I'm thankful Jim made some sweet dessert last night when I wanted it. I'm thankful KDcat is having a fun time with some of her friends right now. I'm thankful that: the trash collectors just picked up the garbage (we don't produce a whole lot since going raw); the older woman across the street has started smiling and being nice to KDcat; the sun is out and the snow is melting; I have another computer job to work on for some income.

Nadi Balance: Part II

Even though this ground-breaking information we're sharing is not necessarily about Lyme disease, the story of Wendi's contracting, suffering, and healing from it is essential background information. So, we're going to talk about Lyme disease frequently here and in the next few posts, but know that the real, underlying story is about so much more than Lyme disease. (In fact, it's about overall health for everyone!)

This is Part II of a two-parter on raw food restaurants. Yesterday, we listed a half-dozen challenges that one might face when opening a raw restaurant. Today, we're focusing in on the more enjoyable side -- the potential advantages that opening raw restaurants offer over their cooked-food counterparts.

Let's dive into it... Here are six things we believe are advantages!

This video is nearly 10 minutes long (sorry, we'll aim for shorter ones in the future), but shows a full process for making a delicious, spicy nut dip. From there, we show two options for making the sandwich -- one using dehydrated raw bread, another using lettuce as the wrapper. Jim here... Sorry for being away for so long. We've got SO much going on these days, it's mind-boggling! More on that later, as I have something in mind already for today...I should start by clarifying that I've been basically raw for almost 4 years now (high-raw, you might say). During the first nearly-two years, I still ate meat from time to time. Actually, I still ate (and drank) almost everything from time to time -- sugars, processed foods, alcohol, you name it -- only less than I did before, and within the context of a dietary intake consisting of a significantly higher percentage of living foods. In those early years, I'd estimate I was averaging 75-90% raw. Not bad ... I definitely experienced improvements in my health!

The big change in consciousness didn't follow until two years ago. (This is an interesting point because, as you can see, I wasn't "ready" for a bigger change for two years into eating a lot of raw foods!) I suppose the difference was that, during the early years, I was pretty much raw by default rather than by conscious decision. As Jules said in Pulp Fiction, "... my girlfriend's a vegetarian. ?Which more or less makes me a vegetarian..." Yeah, that was my case back then, too, although I certainly grew into it (and am thankful that I did).

I'm going to be including questions and answers more often on the blog, since we've had a lot of emails from many of you saying you found last week's Q&A helpful and fun to read. I have many questions I've been saving to share with others, and more come in daily. Don't be shy if you have a question about anything that you think I'd possibly be able to help you with. Last time on Raw Foods 101 we answered the question, "Why should you soak nuts / seeds before eating them."? Naturally, many readers then asked the next logical question, "How LONG should I soak them before eating " Great question!

Don't forget:? You're soaking the nuts and seeds to "wake them up" as would happen in nature. When seeds are soaked in the springtime rain, they wake up and begin to sprout. When this happens, the nutritional content of the nuts and seeds changes (they become an even greater powerhouse of nutrients).

I knew right away that I would be filing this under our "Fun-filled Friday" bannner. Finding pawpaws is a huge treat! They're surprisingly little-known, and also very surprisingly tropical in nature. Who would think that something this delicious and exotic-tasting would thrive in so much of the non-trpoical world!? Jim here... Today marks the half-way point of the month of May. Let me tell you, time really does fly when you're as busy as we are here at Pure Jeevan. We're still working hard on selling our home, arranging for the acquisition of an RV for our national tour, reducing our worldly possessions to a minimum, packing up the ones we're going to? keep, writing for Pure Jeevan, keeping in touch with online Pure Jeevan friends and family, and even a new project or two that will, I promise, totally blow you away! In addition, it's beautiful outside once again, and we've been trying to get out more often for exercise, fun, and soaking in some Vitamin D!

As you can imagine, we need high energy to do all of these things, so you may be wondering:? On that low fat raw vegan regimen, how's it going ?

"Hatice" is a Turkish name, in case you're wondering. The "c" is pronounced like a "j" -- so, her name sounds like "huh-TEE-jay." Our interview with her ran a little long, so I'm going to have to break it into two parts. Here's part one:
