Rita Romano, author of the widely available book Dining in the Raw and executive chef for many years at the Hippocrates Health Institute, is a true pioneer of the raw movement. We were thrilled to have the opportunity to visit with her and her two lovely Boston Terriers, Angel and Oreo. Here's PART TWO of our talk with her:

On March 1st we started a Juice-a-Day Jamboree, to challenge ourselves (and our readers) to include more fresh juice into our diets. We knew we weren't ready for an all-out juice feast, but a juice a day seemed like something we could commit to in our daily lives. So, the Juice-a-Day Jamboree was born. We've been posting periodic updates on our original post about the Jamboree, but figured we'd post periodic juice updates in the main part of our blog, as well, to encourage others to add some more fresh juice to your diets, as well.

We've missed one day of juice since we started the Jamboree. Our original goal was to have our juice first thing in the morning, but we weren't always successful with that. So, we told ourselves that any time of the day is fine, but if we can start the day with a juice we'd prefer it that way. The changes we've been feeling are more pronounced when we begin the day with fresh juice, rather than when we have our juice later in the day.

Here it is...the Queen of all Juices! It's cooling, cleansing, light, easy, delicious, pretty, promotes weight loss, energizing, vibrant, and FUN!

Can one simple juice really be so wonderful for your body? Yes!! Following is the recipe, as well as some highlights about the ingredients and why it's so great for your body.

Cooling and Cleansing Juice

(Serves 1)

4 medium apples

Following up on yesterday's post, today we're going to take a look at the "Clean 15." These are the 15 produce items that, according to research done by the Environmental Working Group, contain the least amount of residual pesticides (even though they're still grown using pesticides).

What this boils down to is: IF you're going to eat conventionally grown produce, these items will harm you much less than those we covered yesterday. So, here's the list, and then we'll try to come up with a sentence to help you (and us) remember everything:

You thought our "Know Your Food" series was dead ?!!? (Or, if you're a new reader, maybe you don't know what "Know Your Food" is yet!) Well, we've been poking around in the archives this week and discovered THREE lost episodes. This is HUGE... Jim here... Since we posted Wendi's two-part series on pasta-making techniques (part 1, part 2) last week, I thought I'd follow up with an additional novel use for the spiralizer -- super-delicious, blazingly fast, ultra-low-fat sweet potato chips! We've done some really great things with sweet potatoes before. (Anyone signed up as a member of the Pure Jeevan family has likely already received our prized sweet potato pancake recipe.) But, these chips are amazing because they satisfy that unmistakable urge for crunchy, healthy snacks -- and in record time. Friends, if you have a dehydrator and sweet potato on hand, you could literally be enjoying these things in under three hours. So let's get going!

As Wendi demonstrated in the videos last week, you can easily make "rounds" using the spiralizer by simply making a vertical slice throughout your vegetable prior to placing it on the spiralizer. So, if we were looking down at the sweet potato, the cut (which goes all the way down the length of the vegetable) would look like this:

This Thursday I want to give a special "Thank You" to Kevin Gianni. He was on my list for a Take the Time Tuesday introduction, but I didn't want to wait until then to tell you about him. I've been following Kevin's work on the Internet since he hosted The Raw Food World Summit last year. You can tell when you hear him speak that he's a genuinely nice, intelligent, caring person. He's honestly listening to what people are saying, trying to absorb the plethora of health information that's available. He asks a lot of interesting questions, too.
